Hi Gayathri… I recently moved to the US and now have a oven and hence started experimenting with baking cakes. My husband is a bit health conscious though. So in all ur recipes can I replace flour with Wheat flour and sugar with Jaggery. I recently tried some recipes with jaggery instead of sugar and they came out well (came across your site only today by luck). Also just curious to know if you have made breads & cakes with other millet flours like saamai, thinai….
Hi Meyyammai, You can easily substitute maida with wheat flour and sugar with jaggery. While using wheat flour, add a little bit more of liquid than mentioned in the recipe. That is it. And for millets, I am yet to try gluten free breads. Will be doing some experiments. If it comes out good, will share it here. Happy Baking!!

What I was wondering was have you ever heard of Bimini Bread? It is a traditional sweet bread (coconut/pineapple) made in the Bahamas that is impossible to get the recipe for! If you are familiar with it, do you have a recipe that mimics it, or better yet, the actual recipe? I fell in love with it over 23 yr. ago and still continue to scour the web hoping someone will put it out there. Thanks again for sharing your fabulous recipes and talent with us.

Thank you soooo much! This is such a protected recipe! If you’ve ever had it you’ll understand why. The people of Bimini protect it feverishly because its passed down from generation to generation. This is a lively hood for some due to the tourist industry, so I almost feel guilty on some level asking for it. I suppose for those like me who have visited once and have no plans of returning, is what prompted my years of search. I’ve never forgotten it!! 🙂

Gayathri how can I make mutigrain bread without maida and glutten
You can substitute maida with the multi grain flour and omit gluten. You might need some extra water while making the bread.
