As mentioned yesterday, I made the Whole Wheat Bread thrice. Though we had some slices slathered with nutella, I also made a savoury pudding with the bread. With onions, tomatoes and cheddar cheese, it made a filling breakfast. This is an eggless version and I have used corn flour to bind the pudding. I have made a sweet version of bread pudding with choco chips and tutti frutti before. And so I tried a savoury version now. I usually grate cheese in a grater, but this time, I just chopped it into cubes and used a hand mixer to process it. And I was so happy with that. It was easy to process while compared to grating in a grater.
My daughter does not like these types of dishes. She only prefers chocolate and what ever form a chocolate takes, she would be happy to gobble it down. So I didn’t even bother to ask her if she would taste. I used a lot of cheese and it tasted so nice. Instead of adding green chillies, I should have added red chilly powder to make it spicy. My husband had it with tomato ketchup.
This pudding is incredibly easy to put together. Saute onions, tomatoes and green chillies and mix with bread and cheese, arrange in a pan and pour the corn flour mixture. Top with more cheese and bake. Serve it hot and I am sure you will love it. Make sure to use a day old bread. Very soft bread may become so soft with the addition of milk. And while slicing, slice the bread into thick slices and then cube them. The pudding will have a crispier crust and soft inside.

Wheat Bread Slices-6-7
Grated Cheddar Cheese-200 gm block
Chopped Coriander LEaves-1/2 cup
Oil-1 tbs
Onion-2
Tomato-2
Green Chilly-4-5
Salt-to taste
Milk-2 cups
Corn Flour-2 tbs
Procedure:
Preheat oven to 175°C.
Cube bread slices and transfer to a bowl.
Shred cheese in a hand mixer or food processor. Reserve 1/2 cup of cheese and add the remaining to the bread cubes.
Add coriander leaves.
In a pan heat oil and saute onions, tomatoes and green chillies until the mixture is dry.
Add it to the bread and mix well.
Grease an 8″ square tin and transfer the bread mixture to the tin.
Press the pieces evenly with a spoon.
In the same bowl, mix together milk and corn flour.
Pour it on top of the bread slices.
Top it with the remaining cheese.
Set aside for 15 minutes so that the bread soaks the milk.
Bake in the preheated oven for 1 hour.
Remove from oven, slice it up and serve..

Hi lovely recipe and very tempting to make right away…have 2 doubts can I add egg to this ..also can I reduce the cheese and replace.it with something else …also.is it ok to use mozzarella cheese instead ..will it make a difference …
Thank you. You can omit corn flour and add one egg instead of that. And yes, you can swap Cheddar with mozzarella. You can definitely use lesser cheese, but it adds a nice taste to the pudding.

Can we add one egg in place of corn flour mixture?
Yes, replace corn flour with an egg. You can decrease the milk quantity also by 1/4 cup.
