Whole Wheat Flour Bread Recipes
As I started compiling recipes, whole wheat flour bread recipes definitely need a place in my blog. I have been experimenting with whole wheat breads for a long time now and have learnt a lot during my experiments. What should be done, what shouldn’t be done are the major lessons I learnt during my trial and I successfully taught a class about it too. Students also have been baking amazing whole wheat breads now, which makes me a proud mentor.
Though I teach breads for beginners, I have also posted a lot of bakes in the blog. This post is a compilation of eight of my favourite whole wheat bread recipes. Some are made with sourdough and some with yeast. Whatever the leavening is, these breads are very delicious and you won’t find the heaviness generally associated with whole wheat breads.

Whole Wheat Flour Bread Recipes – Type of flour to be used
The important point to be noted if you are starting with whole wheat baking is the flour used. There are so many different varieties of flour available in the market. Not all flours are suitable to make breads. For me, only two types work for both breads and cakes. Sharbati type flour or home ground flour. These two give good results. So if you are terribly failing in whle wheat breads, then change the flour you are using. It will make a huge difference.
Whole Wheat Bread Recipes – How to improve Gluten Strength
When you compare maida and whole wheat flour, whole wheat flour’s gluten is not as strong as maida, that is the reason, wheat flour breads turn out very heavy and dense. To improve the strength, you can add vital wheat gluten to the flour. Vital wheat gluten is derived from wheat kernels so you need not worry much about it being chemical.
It is a natural ingredient which is found in wheat. They extract it and we can adjust the concentration by adding the required amount to the flour. It is completely protein. 100 gm of vital wheat gluten has nearly 75 gm of protein, so you are increasing the protein content of the flour.
Soy flour is also rich in protein, so you can also add it to increase the strength. Usually a percentage is added to wheat flour and that percentage depends on the final taste. Too much gluten will have a weird after taste and very little gluten won’t give strength at all. So you need to vary the amount and finalize the proper quantity to be added. You can try 5-10% gluten for the flour used.

Whole wheat Sandwich Bread
This is a wonderful sandwich bread recipe and you need a lot of patience to make this. If you rush the process, the results won’t be as good as I have shown.

This is one of the whole wheat breads which turned out too perfect. From the colour of the rolls to the softness and texture, I couldn’t find any fault with it. I must say that it is a perfect recipe and without too much oil or butter.

Sourdough Focaccia
Focaccia is a versatile bread where you can customise the topping as well as the ingredients that go into the dough. If you love cheese, then you can even add it to the topping. This is an Italian bread which is quite famous in the blogging world.

Whole wheat Cinnamon Rolls
Another sourdough recipe that is too good. The buttery bread dough with the cinnamon filling is absolutely delicious to taste.

Whole wheat Brioche Buns
Brioche is an enriched French bread with a very soft, tender crumb. Traditionally, it’s made with a good quantity of eggs and butter, but for those who don’t eat eggs for any reason, this recipe is definitely a keeper. And to make it more interesting I have used wheat flour or atta to make these buns. You can use it a sandwich/ burger bun or just taste it slathered with nutella or butter or jam.

Whole wheat Pav Buns
These pav buns are perfect to be served with vadas or with a spicy bhaji. These make an amazing treat for chat lovers.

Whole wheat Masala Buns
Made with the same base as the spicy rolls, these buns make an amazing tea time treat. Customize it with your favourite herbs.

Whole wheat Pumpkin Loaf
The bread was like a cross between quick bread and yeast bread. The pumpkin and the wheat flour gave an earthly flavour and the bread was slightly on the denser side. But it worked great for toast. I added some cheese spread on the toasted sliced and loved it.
