For the third day, here is Spanish pizza/ tart/pastry which is quite easy to make and tastes so yum. Coca is Spanish version of a pizza and it can be divided into four types. The open coca, which has a base and toppings, like pizza. A closed coca which is covered on all sides with the dough and has a filling inside. The plain coca, which is just made plain as the name suggests and the toppings are added during the serving time. And the fourth is the sweet version. Mostly cocas are made or bought during holidays. They have srong religious connections and there are some cocas named after saints. And then there are some who don’t connect it to any festivals and enjoy it all year around. Even the base dough varies for different cocas. Some use yeast based pizza dough while some use butter based pastry dough.
The toppings can vary from peppers, onions, tomatoes to meat. It all depends upon individual taste. As I was making it for Sruti, I went with a really simple topping of onions and bell peppers. I was skeptical at first because of the bell peppers, but she finished the peppers too. The base is made thin, so the coca turns out crispy. If you want it soft, reduce the baking time. In this series, I have made most of the breads crispy because it is what my daughter prefers. So feel free to change the thickness or baking time according to your preference.
Ingredients:
All Purpose Flour / Maida – 1 cup
Salt – 1/3 tsp
Instant Yeast – 1/2 tsp
Water – as required
Olive oil – 1 tsp
For The Topping:
Onion
Yellow Bell Pepper
Tomato
Salt and Pepper
Procedure:
In a bowl, mix together flour, salt, yeast.
Add oil and enough water to make a soft dough.
Knead the dough for 5-10 minutes until elastic.
Cover and set aside for 1 hour or until double in volume.
Slice onions, peppers and tomatoes into thin long slices.
Preheat oven to 250°C.
Punch the dough and shape it into a thin rectangle on a greased baking tray.
Top it with sliced onions, peppers and tomatoes.
Sprinkle salt and pepper on top.
Bake in preheated oven for 20 – 25 minutes or until golden.
Slice it up and serve hot.

I had these Spanish Coco’s at my nieces wedding , I fell in love with the crisp pizza and even tried it , but the clicks were pretty miserable so it never made it to the blog .
I love this peppery version of Spanish Coco , and you have baked it to perfection .
