When you finish a meal you always finish it with curd rice. So to end the series of paneer rice varieties, I have opted for a delicious curd rice using paneer. We also avoid curd during weight loss period, so I made this curd rice with milk kefir. Milk kefir has very less carbs and is so good for the bacteria. It is one of the best probiotic drink available. I have even written about how to make milk kefir at home. If interested, do take a look at this post. But if you have no restrictions in using curd, go for home made curd instead of kefir. Using home made paneer would be so great for this, but if you are using store bough, then fry it in ghee for a few minutes more before adding the curd/ kefir. This would be a perfect lunch for a really simple and light meal.
When I started with the diet I was so sure that I couldn’t taste any of my favourite dishes, especially the Indo Chinese ones which needed deep frying and all those sweet sauces. But after I made the red chilly sauce and green chilly sauce without sugar, I felt that I could even make some of my favourites with proper planning. I did some necessary changes in the recipe and made my favourite manchurian with paneer. You need to trust me, the flavour was perfect and we didn’t miss the deep frying part or the batter coating at all. The flavour depends so much on the sauce. If you have the sauces in your fridge, then the dish takes very less time to make. And it is totally delicious and a filling meal.
Here is one more easy to make creamy paneer which is protein rich and low in carbs. When on paleo or any other low carb diet, it is better to have the food protein rich because it makes you feel full and reduces all those cravings for carbs. That is why it is so much important to have protein in the diet. So do not skimp on using paneer if you are on vegetarian diet. You need it. Another source of protein can be cheese, but for me cheese feels too heavy. But still I will be sharing one or two recipes with cheese later.
This is one dish that reminds me of my chat days. I used to love chat and whenever we go for outing, we make sure to have a chat of any type. But it has been a long time since I had any chat, I think it is 8 months now. So just to satisfy my craving I add some chat masala to dishes which gives a real satisfaction. That is what I did to paneer that day when I was craving for a chat. As I am too strict about carbs, I try to avoid even onions on daily basis, but still have them once in a while. If you can’t have your chat without onions, then add some chopped onions on top of the paneer and enjoy. And also go for green chutney too. I wanted to have it as a crispy treat so I didn’t add any chutney here. But I added some dried rosemary for a little bit of twist in the flavour.
This recipe is one of my favourite recipes which I do regularly. Even hubby likes this so I have done it multiple times. Again making this is going to be really easy. I have used kasoori methi leaves because it makes the preparation easier. If using fresh methi leaves, the texture will definitely change. And as for spices, I have used the usual readily available spices. But again there is no set rule for making this dish. Sometimes I add some curd while cooking the onions, some times I skip it and some times I add juice of one lemon for the tang, but everything is according to my mood that day. And that is how I usually cook, without any set rules. I served this along with some carrot slices, but add any salad of your choice for a filling meal.
