Low Carb Cheese Crackers are made with minimum ingredients, they are gluten free and egg free and make some amazing crunchy treats.

Low Carb Cheese Crackers – Ingredients Used
Almond flour is a good gluten free low carb option to substitute flours in any recipe. But they are high in fats, so it is good to have them in moderation. In this recipe, I have used almond flour as the major ingredient.
Cheddar Cheese is usually used for cheese crackers. I have used a combination of cheddar and mozzarella as I had them ready in my kitchen. When ever I get cheese blocks, I grate them in bulk, and store in boxes in fridge or freezer. It becomes so easy to use them in recipes.
Garlic Bread Seasoning is the spice I have used in this cracker recipe. It is completely optional. You can also use any type of spice you love. Just dried herbs also work really well in this recipe.
Salt should be kept at minimum as cheese itself will have some salt in it.
Water is what we need to bring everything together. Just one or two tbs of water is enough to make the dough.

Kneading the dough
Using a food processor or a blender jar to mix the dough makes your life easier. Hand kneading can be a real pain because of the grated cheese. You can even use your mixer to make the dough. use only pulse mode. Don’t grind it.

Once the dough becomes clumpy, knead it well on counter. Also using a cling film will help you roll out easily. Without cling, the dough might stick every where. And then use a pizza cutter to slice the crackers. If you use a rolling mat, it becomes so easier to slice because of the grid lines.

Use a spatula to transfer the crackers to baking tray. It is quite sensitive, so you need to be really careful while transferring. It breaks easily. Baking would take any where from 10-15 minutes depending on the thickness of the cracker. Look for even browning of the cracker. The cheese will start sizzling once the cracker is completely done. It is the perfect time to remove the cracker from oven.
Immediately transfer the crackers to a wire rack and allow them to cool. Retaining them on the tray would create condensation and make the crackers soggy.

You can store the cooled crackers in an airtight box at room temperature for 2-3 days. If they turn soft, just bake them for 3-4 minutes in oven to make them crisp. Low Carb Cheese Crackers
Ingredients
- 150 gm Almond Flour
- 150 gm Cheddar Cheese grated
- ¼ tsp Salt
- ½ tsp Garlic Bread Seasoning
- 1-2 tbs Water
Instructions
- Preheat oven to 180C.
- In a food processor jar, take the almond flour, grated cheese, salt and seasoning and pulse it until all the ingredients combine together.
- Add one tbs of water at a time and keep on running the processor. Add one more tbs of water if needed.
- You need the dough to clump up in the jar.
- Take it on to the counter and gently knead to bring it together.
- Place the dough on a rolling mat, flatten it, place a cling wrap on top and roll it into a thin sheet.
- Using a pizza cutter, slice the sheet into 2” squares.
- Transfer the squares to a lined baking tray with the help of a spatula.
- Bake the crackers for 10-15 minutes or until brown and crisp.
- Remove from oven, transfer the crackers to a wire rack and let them cool completely.
- Store them in air tight box for 2-3 days.
