Eggless Suomalaiset Puikot / Finnish Almond Logs

For the sixth day, we travel to Finland for the alphabet F. Finland, officially the Republic of Finland is one of the five Nordic countries and it is situated in the Fennoscandian region of Northern Europe. It shares its boundaries with Sweden to the west, Norway to the north, Russia to the east and Estonia to the south. Finnish cuisine is generally notable for combining traditional country fare and haute cuisine with contemporary continental style cooking. When I was searching for a cookie recipe from Finland, I stumbled across this beautiful almond crusted cookie logs. So immediately I bookmarked it and tried it out today.

You can use either blanched almonds or almonds with skin. I converted the recipe into eggless one and used milk instead of the egg yolk in the recipe. The recipe was quite easy to make and was done in less than 30 minutes but it takes long to bake. These cookies were so crisp and crumbles in the mouth. I loved the crunch of the chopped almonds and mild sweetness of the cookie. As usual this was a great cookie recipe and I am so happy that I tried. DSC_0128

Hubby dear gave a thumbs up when he tasted it. But I packed all the cookies and sent it with my assistant as it is really becoming dangerous to eat butter rich cookies daily. If you want to make a huge batch of cookies, this might be apt as it involves very less work in making and shaping the dough. DSC_0123

Makes 32 cookie logs

Ingredients:

Butter-1/2 cup

Sugar-1/4 cup, powdered

Milk-2 tbs

Vanilla Essence-1/2 tsp

Salt-a pinch

Flour/ Maida-1 2/3 cups

Blanched Almonds-1/2 cup

Sugar-1 tbs

 

Procedure:

  1. Preheat oven to 175°C.
  2. In a bowl cream together butter, powdered sugar, vanilla and milk until light, pale and fluffy.
  3. Add in the flour and salt and make a soft and non sticky dough.
  4. Divide it into 4 equal portions.
  5. Divide each portion into two and roll them into logs.
  6. Chop almonds and mix with sugar.
  7. Roll the prepared logs in the almonds and then slice each log into 4 equal portions.
  8. Arrange them on a greased tray 1″ apart.
  9. Bake in the oven for 15-20 minutes or until golden brown.
  10. Transfer the logs to wire rack and allow them to cool completely.
  11. Store in air tight jar.

Ingredients

  4. Finnish Cookie Logs (I.e. “suomalaiset puikot” in Finnish) are actually Swedish invention and almost completely unknown in Finland.
