Baked Granola Bar Recipe – Video Recipe

Granola bar is a simple to make recipe which can either be baked or not baked. I have already added a No Bake Granola Bar in the blog, but haven’t added a baked version so far. I usually make granola with quick cooking oats/ porridge oate. But when I saw a pack of rolled oats in Amazon, I immediately ordered a pack. The rolled oats is an amazing sight to look at. If you haven’t yet tried rolled oats, I suggest you try them. They are just amazing.

 

The baked version of granola bars is almost similar to the no bake version, the only difference is baking it. obviously. The no bake granola can’t be kept at room temperature because it becomes so soft when at room temperature. Only once chilled it is nice and crisp. But the baked version retains its crispness when stored at room temperature. I live in a really hot place, so I never keep eatables at room temperature. But I shouldn’t have worried too much. Hubby and Sruti loved the bars so much that the whole batch vanished in two days and there was a fierce competition for that last bar.

Ingredients:

Rolled Oats – 225 gm

Almonds – 100 gm

Butter – 100 gm

Brown Sugar – 125 gm

Water – 2 tbs

Peanut Butter – 2 tbs

Vanilla Essence a few drops

Flax Seeds – 25 gm

Dried Blueberries A Handful

Dried Cranberries a Handful

Sunflower Seeds  a Handful

Pumpkin Seeds a Handful

 

Procedure:

Preheat oven to 175°C.

In a baking tray spread oats and almonds and bake for 10 – 15 minutes.

By the time it is baking, make the sugar mix.

In a sauce pan, mix together brown sugar, water, butter, peanut butter and vanilla.

Heat it until all the ingredients melt together.

Remove from flame and set aside.

Line a small tray with parchment with it overhanging at the edges.

Once the oats and almonds are baked, transfer them to a bowl.

Add the cranberries, blueberries, sunflower seeds, pumpkin seeds and flax seeds.

Add the prepared sugar syrup and mix well until the whole mixture comes together.

Transfer to the lined tray and press it well with a spatula or a spoon.

Bake it in the preheated oven for 20 minutes.

The mix will be so bubbly. Allow it to cool completely before removing it from the tray.

Gently release the sides of the parchment and lift it off the tray.

Transfer to a cutting board and cut it into bars or squares.

Serve them immediately or store in airtight container.
