This easy to make granola needs no baking and is such a versatile recipe that you can use any nuts or seeds or dry fruits to your liking. After trying cookies with oats, I wanted to do another easy breezy recipe for the Elevenses theme. Elevenses is nothing but a light snack usually taken with a beverage during mid morning. These no bake granola bars were perfect for the theme and it can also be made with one’s favourite ingredients. In this recipe I have used everything that is my daughter’s favourite. When I make this type of recipes, I usually don’t go overboard and try new things because my daughter is so unpredictable. I have used quick cooking oats as that is what I get here, but if you can get the old fashioned oats, then use it. The bars will be very beautiful.
Granola bars usually are baked but there are versions which doesn’t need any baking. And usually those recipes use nut butter as the base. But I went for the usual butter, honey and brown sugar combination, but added some coconut flour for binding. The mixture can either be shaped into bars or into small balls as energy bites. With all the nuts and oats these bars are so crunchy. As this is a no bake recipe, you need to roast the oats and nuts before adding. And also make the syrup with honey, butter and brown sugar which helps with the binding of ingredients as this doesn’t have any binding in it. I also added a bit of coconut flour to make sure they are intact and don’t go crumbling while slicing. I also added some choco chips which melted into the mixture which helped with the binding a lot. To the basic recipe, add any nut, dried fruits and add ons as per your choice and enjoy it with a cup of coffee. January went on super fast and I hope you loved all my recipes this month. Makes 8 Bars
Ingredients:
Oats – 1 cup
Broken Cashew nuts – 1/3 cup
Butter – 50 gm
Brown Sugar – 50 gm
Honey – 2 tbs
Coconut Flour – 1/4 cup
Choco Chips – 2 tbs
Dried Cranberries – 2 tbs
Butterscotch Chips – 2 tbs
Procedure:
Toast oats and cashew nuts until slightly golden. You can do this in a pan or spread on a baking tray and bake at 150°C for 15 minutes.
In another pan mix together butter, honey and brown sugar and heat until everything melts together. You can also MW this mixture on medium for 2 minutes.
Keep all the ingredients ready.
Once the oats mixture is toasted, add it to the brown sugar butter mixture and mix well.
Add the coconut flour and choco chips, butterscotch chips and cranberries.
Give it a nice mix.
Line a small tray with parchment and transfer the mixture to the tray.
With the help of a spatula press it well to form a slab.
Cover and refrigerate for one hour.
Using a large serrated knife slice it into bars.
Transfer to an air tight container and refrigerate.

What can I use to replace the coconut flour?
You can use almond flour / grated and roasted coconut.
Your no bake granola bars have turned out very beautiful. With all the healthy ingredients thrown in, these are way better than the store bought ones.
