Eggless Banana Choco Chips Cake – Video Recipe

I have a good news to share. Gayathris Cook Spot completed seven years and is starting its eighth year. Thanks to all my readers and visitors, without you I couldn’t have made it this far. I hope to keep this space active as long as I can and I hope that you will all support me throughout the wonderful journey. What started as a distraction for me during some personal problems, has grown into a vast online cook book with lots of admirers. I am so glad to say that I have built a community of like minded readers through this blog. Before seven no one knew I existed apart from the immediate family but with increasing readers and the amazing feedback I get from them, I really feel proud with what I have done in these seven years.

 

 

If you see my first post you will know one thing for sure. Apart from cooking I didn’t know anything needed to become a successful blogger. But these years of blogging has taught me so many things. Being a self taught blogger, I never asked professional help. With help from friends and so many generous souls who write in their blogs, I have learnt about blogging. Blogging is not about earning money. There are so many better ways to earn and blogging is not one of them. We get peanuts worth from blogging but the satisfaction it brings is what drives me to write more. It is all about passion and not about earning. So my sincere advice to all those who want to start a blog to make quick money, please think about it again. It is not easy. But if you have this passion to write, cook or bake, do start it immediately.

 

 

To celebrate this wonderful day I decided to make a cake. For me baking a cake brings me joy rather than eating the cake. So I decided to bake a simple banana cake with lots of choco chips to celebrate. I was sure that my daughter and her friends would love it because of the choco chips. For this cake I didn’t follow any banana cake recipe like I usually do. I converted one of my recipes to suit the banana cake and I was not disappointed. It turned out awesome. Many ask me for simple tea cake recipes. This is one among them. It is so easy to make and can be enjoyed with a cup of hot coffee or tea. And it doesn’t need any fancy frosting.

 

 

If you have seen my cakes, I usually bake them with a smooth flat top. But tea cakes need to be rustic. They need to have a slight dome and cracks for a beautiful look. So I increased the temperature of my oven so that the cake gets the look and again it didn’t disappoint me. It turned out super rustic. And look at those tiny choco chips. They add to the beauty. Makes a 6″ cake

Ingredients:

Flour – 1 cup / 115 gm

Baking Soda – 1/2 tsp

Baking Powder – 1 tsp

Salt – a pinch

Banana – 2 medium

Oil – 1/4 cup

Milk – 1/2 cup

Vanilla Essence – 1 tsp

Vinegar / Lemon Juice – 1 tsp

Organic Cane Sugar / Brown Sugar – 1/3 cup

Choco Chips – 1/4 cup

 

Procedure:

Preheat oven to 180°C.

In a bowl peel the banana and mash it with a fork.

To that add in oil, milk, vanilla and vinegar.

Mix well until combined.

Add sugar and mix until it dissolves.

Mix together flour, baking powder, baking soda and salt in another bowl.

Add it to the banana mix and mix gently with a fork until combined. Do not over mix.

Now add the choco chips reserving a few for the topping.

Gently fold them in.

Grease, line and dust a 6″ cake tin.

Transfer the batter and level the top.

Top it with the remaining choco chips.

Bake in the preheated oven for 45 – 50 minutes or until a tooth pick inserted comes out clean.

Cool on wire rack for 10 minutes.

Flip it out, remove the baking paper and return the cake to the wire rack.

Cool it completely before slicing.

Serve it with a cup of hot coffee or tea.

        I tried your recipe thrice.First time,the cake came out really good, fluffy and everything was perfect.
        In second and third attempt,the cake was soggy.
        I am not able to figure out ,what might have went wrong.

    Can we add mango instead of banana. If yes how much.
    The banana cake turned out awesome. Since fresh mangoes are available I would like to try a simple mango cake.

    My chocochips settled down while the cake was getting baked. As a result it was difficult to take the cake out. It got broken. How can I fix it?
