Eggless Vanilla Madeleines Recipe with chocolate are so delicious and easy to make too!
Eggless Vanilla Madeleines has been in my to do list for a long time. I was looking for the madeleine pan, which was too expensive in Amazon. So I was waiting for some other source to get them, and one day saw this beautiful golden tray at one of the FB pages and immediately ordered for it. I am trying to recall the person from whom I ordered, but am not getting the name. Once I get, I will update it here.
Eggless Vanilla Madeleines Recipe inspiration!
Madeleines are French Cookies or mini cakes baked in a special shell like tray. Usually batter made with whipped egg whites are used for a very light cake/cookie. When you try making it eggless, you can either use whipped aquafaba or some kind of egg replacer, but I didn’t want to complicate the recipe. As you know, I have been trying to simplify eggless baking without compromising on the results. So I used my vanilla cake batter to make these and was so happy to see the results. Though they are not as light as the egg based ones, they are absolutely delicious with the chocolate.
Eggless Vanilla Madeleines Recipe – Chocolate Coated:
Usually madeleines are either served with a dusting of icing sugar or is dipped in chocolate and nuts. Over baking madeleines would make them hard cookie like, so if you prefer soft madeleines, then take care not to over bake them. I am planning on more flavours of madeleines soon. To start with, here is a very simple vanilla madeleines recipe.
Maida / All Purpose Flour – 100 gm
Granulated Sugar – 75 gm
Baking Powder – 1 tsp
Melted Butter – 50 gm
Milk – 125 ml
Vanilla Essence – a few drops
Preheat oven to 200°C.
Brush madeleine pan with butter and keep aside.
In a bowl, combine together, butter, milk, sugar and vanilla.
Mix flour and baking powder in another bowl.
Add flour mix to the milk butter sugar mix and mix to form thick batter.
Divide the batter between the moulds in the pan.
Bake in preheated oven for 15 minutes.
Remove from oven and immediately flip the pan and transfer the madeleines to the wire rack.
Let them cool a bit.
Melt chocolate, dip the corner of each madeleine in chocolate and add some sprinkles on the chocolate.
Let them set on wire rack.
Serve them immediately.
