Kourebiedes – Greek Snow Ball Cookies Recipe

For this week, I have chosen to explore Greek cuisine. Greek cuisine consists of so many amazing recipes. Phyllo pastries are prominent in this cuisine as well as feta cheese. In desserts, honey plays an important role. I wanted to make some healthier refined ingredients free treats for Sruti and my first choice is the snow ball cookies. These cookies are made for special occasions and festivals. These are made for weddings so they are also called as Greek Wedding Cookies. The addition of almond flour gives it the melt in the moth texture and they are rolled twice in icing sugar. They are so much similar to the Mexican Wedding Cookies or the German Vanillekipferl

 

 

I also made this without eggs. And used wheat flour / atta instead of all purpose flour, brown sugar instead of white sugar. I also made icing sugar with brown sugar as the store bought icing sugar is made with white sugar. Just grind together the brown sugar and corn flour until fine and use it for rolling the cookies. The texture of the cookie was so good and it was so buttery. The brown sugar adds a distinct flavour to them. MAny of you ask about the brown sugar I use in  recipes. I use Amrit brown sugar. You can also use powdered jaggery, cane sugar or any unrefined sugar of your choice.

 

 

 

Ingredients:

Wheat Flour – 1 1/4 cups

Almond Meal – 1/2 cup

Baking Powder – 1/4 tsp

Salt – a pinch

Brown Sugar – 1/2 cup

Butter – 100 gm

Milk – 1/4 cup

Icing Sugar To Dust

 

Procedure:

Preheat oven to 175°C.

In a bowl, mix together wheat flour, almond meal, baking powder and salt and set aside.

In another bowl cream together sugar and butter until creamy.

Add milk and beat until creamy and fluffy.

Finally add in the flour mixture and mix to form a soft dough.

Take tablespoons of dough and shape it into a ball.

Place it on a lined baking tray.

Bake the cookies for 20 – 25 minutes or until the base is golden.

Remove from oven and allow it to cool for 10 minutes.

Roll the warm cookies in icing sugar and rest them until completely cool.

Store in airtight jar and enjoy!
