Clafoutis is a French dessert or breakfast dish made with cherries and flan like batter baked together. This is a dish which is based on eggs. The eggy batter when baked becomes a nice firm clafoutis and it is really tough to replicate it with out eggs. So I chose this recipe for this month’s Baking Eggless Challenge. I was thinking of paneer as the egg substitute so that the clafouti will resemble the original. The original recipe is from Food website. Here is the link to the recipe from which I adapted mine. It uses cherries, but as we don’t get cherries here, I used the small plums we get here.
But I was wrong. The experiment was flop. So for the next attempt, I tried one more substitute. But even it didn’t work. So two attempts failed and I was sceptical try it again. But I didn’t want to miss the challenge. So my final experiment was with egg re-placer. I recently bought a small pack of egg re-placer online and I used it. I never believed that it will work out but it did. I was so happy. It tasted great. The plums I used were slightly tart and it went well with the sweet clafoutis. Even hubby liked it. And so after so many trials and errors, I made it!!!!
Ingredients:
Maida/ Flour-1/3 cup
Egg Replacer-1 tbs
Milk-1/2 cup + 2 tbs
Sugar-1/3 cup
Vanilla Essence-1/2 tsp
Salt-a pinch
Plums-9-10
Procedure:
Preheat oven to 175°C.
Remove seeds from plums and slice into wedges.
In a bowl mix together flour, sugar, egg replacer and salt.
Add in milk and vanilla and mix until sugar dissolves and the batter is lump free.
Grease a small loaf pan with butter.
Pour 1/4th of the batter and bake for 5 minutes until the top is firm.
Now arrange the plum wedges on top and pour the remaining batter. Reserve a few wedges to top after you pour the batter.
Bake the clafouti for 30-40 minutes or until slightly browned at the edges.
Once warm, slice it up and serve along with cream or as it is.
