For the second day of Cakes and Cookies theme, I chose to make chocolate muffins. My daughter is a great chocoholic and she loves anything chocolate. Muffins are easy to bake and makes a lovely snack for kids. When I went through the list of muffins I have baked, I saw that I don’t have a chocolate muffin in my archive. So I decided upon these muffins and to make it more interesting, I added tutti frutti and choco chips to the batter.
These muffins have just 2 tbs of oil for 8 so it makes 1/4 tbs of oil per muffin. I have talked in detail about the difference between cupcakes and muffins previously. Please take a look at my Eggless Choco Chip Muffins post (click for recipe) for a through insight on the topic. Muffin batter should be handled with care. Over mixing will result in dense muffins so make sure to mix only until the ingredients are combined.
These muffins were so soft and are perfect for breakfast. But I prefer them to be served as snacks to my daughter. The choco chips and tutti frutti adds a nice crunch to the otherwise soft muffins. Sending this to Kid’s Delight – Cakes and Cookies hosted by Vidya and started by Srivalli.
