Do you love cheese? Then these cute cheesy bites will surely tempt you. I saw this recipe while I was searching for Greek dishes. They added so many cheeses in it, but I had only feta and mozzarella at hand. So I tried using both. Last time when I visited Chennai, I bought home a 200 gm bar of Feta cheese. It is quite expensive. So after making two dishes, I was left with 1/2 a cup of crumbled feta which was asking me to use it up. I felt that this recipe is perfect to use up all the left over cheese. Feta is quite salty and so I didn’t use any salt in the recipe. The recipe is quite easy to put together but still I had some problems. But somehow I managed to solve all my problems and create this absolutely delicious crispy crusted soft textured bites. Whether you eat it hot or at room temperature, it tastes amazing. But some may not like the flavour of feta. My hubby is one, so he didn’t like it. Try this only if you are a fan. You will love it.
Frying cheese is not easy. If exposed to heat cheese melts. SO if you want to deep fry, you need a protective coating to ensure that the heat doesn’t melt the cheese fast. I read so many recipes and each recipe had a different coating. I tried all and everything failed. So I came up with my own version. The first attempt was coating the frozen cheese balls with flour. Once in oil, flour dissolved and I ended up with a hot gooey mess. Next I used a bread crumb coat. Again it fried nicely but after a while the bread crumb crust broke and cheese oozed out in oil. So I needed a strong coat. I double coated the cheese balls in bread crumbs and finally I was able to take out golden deep fried beauties out of oil. They turned out so nice. And when you take a bite, the bread crumbs form a crispy layer on top and inside there is gooey cheese. Yum!!
Feta Cheese-1/2 cup
Pepper – to taste
Roasted Cumin Powder-1/4 tsp
All Purpose Flour/ Maida-1/4 cup
Bread Crumbs-1 cup
Oil-to deep fry
In a blender add the cheeses, pepper and cumin powder.
Grind until smooth.
Transfer to a bowl and refrigerate until firm.
Now pinch small portions and shape them into balls.
Place on a plate and freeze until firm. I left it overnight.
Mix flour and enough water to make a thin batter.
Take the bread crumbs in a large plate.
Dip each ball in the flour, and place on the bread crumbs. Roll to coat evenly.
Now dip it again in the batter and once again place it on the bread crumbs.
Roll to coat evenly.
Gently drop in oil and fry until all the sides are golden.
Drain and arrange them on a plate.
Serve hot or at room temperature.
