Navarathri – Day 7 – Sweet Corn Sundal

Today is the seventh day of Navrathri and the menu is quite simple. For the morning neivedhyam, I made Sambar Saadam and Oats Paayasam and for the evening it is sweet corn sundal. Sambar saadam is a quick one pot meal which can be made in a jiffy and oats payasam is a healthy choice. I didn’t add ghee in this. Just made it plain but still it was delicious. Sundal is in its simpleast form. Just tempering and some grated coconut made it perfect..

Sweet Corn Sundal

 

 

Ingredients:

Sweet Corn-2 cups

Oil-1 tbs

Mustard Seeds-1/2 tsp

Urad Dhal-1/2 tsp

Asafoetida-a pinch

Red Chilly-2

Salt-to taste

Grated Coconut-2 tbs

Procedure:

1. Boil sweet corn until tender. Strain the water and keep aside.

2. In a pan add oil and add the mustard, urad dhal, asafoetida and red chilly.

3. When they crackle add the sweet corn and salt.

4. Give a nice mix.

5. remove from flame and add the coconut.

6. Mix well and serve hot…
