Eggless Chcolate Cookies

I have used cocoa powder to make cookies but this is the first time I am using melted chocolate in my cookie recipe. Though the colour is a bit light, the cookie was very nice with chocolate flavour. It also has chocolate chips in them. I saw this recipe in a book I bought recently. I think I should have topped the cookie with some chocolate chips for an amazing look. The texture of the cookie was great. While preparing the dough, make it crumbly. Do not make a soft dough. The texture of the cookie will be very different when you knead a soft dough.



Makes 25 cookies

Ingredients:
Maida/ All Purpose Flour-1 1/2cups
Butter-1/3cup
Powdered Sugar-1/2cup
Chocolate Chips-1/6cup (I used a combination of bitter sweet and white chocolate chips)
Curd/ Yogurt-1/4cup
Vanilla Essence-1/2tsp
Baking Powder-1/2tsp
Bitter Sweet Chocolate-30gm

Procedure:
  1. Preheat oven to 180C.
  2. In a double boiler melt chocolate.
  3. In a bowl, add butter and sugar and beat until creamy.
  4. Add curd and beat to incorporate.
  5. Add the melted chocolate and mix well.
  6. In another bowl, mix maida and baking powder.
  7. Add the maida along with essence and chocolate chips to the butter mixture and mix well.
  8. The dough will be crumbly and when pressed together it will retain the shape.
  9. Divide the dough into 25 equal portions.
  10. Roll each portion into a ball and press it slightly to flatten it. Don’t worry if cracks appear.
  11. Line a tray with butter paper and arrange the cookies on the tray.
  12. Place the tray in the middle rack and bake for 12-15minutes or until the bottom of the cookies is brown.
  13. Remove from oven and carefully transfer the cookies to a wire rack.
  14. Allow it to cool completely. When hot the cookies will be soft but after cooling they come to the correct texture.
  15. Store in airtight jar and serve along with a cup of coffee or tea.
