E – English Muffins – A – Z Flat Breads Around The World

English muffins are small round usually flat breads which are sliced open, toasted and served for breakfast or as a snack in England. These are called muffins in UK, but in the US,  these are called as English muffins to differentiate between the cup cake like muffins available there. You can use a yeast dough or sourdough and any grain flour to make English muffins. For a sweet version, honey or jam is applied on the toasted muffins and for a savoury version, these are served with eggs. This can also be used as a sandwich bun.

 

 

The method of making the dough involves making a starter and then using it in the dough. So it will have two rises and a third rise after shaping. SO it takes some time to make these English muffins but they are totally worth it. These are not baked but skillet cooked. Make sure to cook it on lowest flame, because the crust will burn while the inside of the bun is still raw. I made the mistake of making it a bit thicker. I didn’t imagine the rise on the tawa. So my muffins were so plumpy and took a lot of time to cook. But the texture of the bun was awesome. My daughter who loves these types of buns enjoyed them on a week end lunch.  I served these with home made nutella. What more can she ask?

Makes 6 Muffins

Ingredients:

For The Starter:

All Purpose Flour / Maida – 1/3 cup

Water – 1/4 cup

Instant Yeast – 1/4 tsp

 

For The Dough:

Maida / All Purpose Flour – 1 + 1/2 cups

Instant Yeast – 1/2 tsp

Salt – 1/2 tsp

Sugar – 1 tbs

Milk – 1/2 cup

Melted Butter – 1 tbs

 

Procedure:

In a bowl mix together starter ingredients and make a smooth thin dough.

Cover and set it aside until double in volume.

In a large bowl, take maida, yeast, sugar and salt and mix well.

Add the starter, melted butter and milk and mix to form a smooth dough.

Knead it for 10 minutes until smooth and elastic.

Cover and set aside until double in volume.

Take it onto the counter, press to release air.

Divide the dough into 6 equal portions.

Rolle ach portion into a tight ball and press it to make it flat.

Place on a greased tawa, cover and set aside for 10 minutes.

Now place the tawa on low flame and let one side cook for 6 minutes.

Flip on the muffins and let the other side cook for 6 minutes too.

While serving, slice each muffin into two, roast it with some butter and serve with honey, jam, butter or nutella.
