Oven Roasted Almonds Recipe – Vegetarian Paleo Recipes

Almonds is an important part of vegetarian paleo diet. So how come high fat almonds are considered diet food? In paleo we try to reduce carb intake and increase fat intake. The energy needed are got from the fat consumed and do not worry, it will not increase your weight. I have been on paleo for the past 24 days and I am so happy with my weight reduction. I haven’t checked my weight for now, but the dress which was in my cupboard for more than a year is fitting me nicely. I will be sharing more recipes here. Coming to the roasted almonds, this is for the breakfast and not for snacking. I am not sure whether it is recommended in the usual paleo recipes, but this is highly recommended in vegetarian paleo diet. I will try to add some easy words about why we use almonds for breakfast. Almonds increase good cholesterol and reduces bad cholesterol. It is high in fat and as paleo is high fat diet, almonds suit it perfectly. Almonds have phytic acid which is a great antioxidant. But there is also some negative role of this acid. It reduces the intake of nutrients in our body. So to get rid of most of the phytic acid in almonds, it is soaked for 12 – 16 hours before roasting. And make sure that you don’t consume anything before or after two hours of consuming roasted almonds. To roast these nuts, we use ghee. How tasty this could be? This is what I love in paleo. You don’t have to starve in this diet. For spice, I have used red chilly powder and salt. You can also use cumin powder and coriander powder. I have roasted the nuts in oven but if you don’t have it, just pan fry them. It is such a filling breakfast. The recipe serves one person. If you feel that almonds are too expensive, try the Butter tea recipe I have posted instead of this for breakfast.

 

 

 

Ingredients:

Ghee – 1 tsp

Almonds – 10 gm

Salt and Red chilly Powder to taste

 

Procedure:

Soak almonds for 12 – 16 hours.

Drain water and pat them in a towel to dry.

Add a tsp of ghee and mix them well.

Spread them on a baking tray.

Bake in a 200C oven for 20 – 25 minutes or until it is aromatic.

Remove from oven and transfer to a bowl.

Add red chilly powder and salt.

Mix well.

Serve immediately.

 

 

Disclaimer: The recipes I share are the part of vegetarian paleo diet I have been following. I wouldn’t say that this is authentic paleo as paleo consists of meat and very less milk. This one is for those vegetarians who don’t even consume eggs.

  1. Hi, very interesting. 2 questions.
    1. dont we have to peel the skin? I read in some posts that the skin peeling is important to absorb the nutrients. pls clarify.
    2. can we just soak, peel the skin and eat it without roasting too?
