The two months of my daughter’s summer vacation was spent mostly in our house and I had the tough task of finding her the snacks daily. I didn’t buy anything outside and tried to make all her snacks at home. As mango season was at its peak during holidays, I made so many dishes with mangoes. Popsicles and milkshakes were made in so many avatars. After making mango popsicle with milk and cream, here is one more made with curd. I first thought of making mango lassi but at the final moment went on preparing this popsicle as I know popsicle would be more inviting for my daughter than a glass of lassi.
This popsicle turned out very smooth and creamy. When you beat the curd and mango mixture in mixer, it turns into a soft and light mixture and when frozen the popsicle is so light and absolutely delicious. Making popsicle is one of the easiest ways to make a kid happy. Whatever juice or milkshake you make, just pop it into popsicle moulds and freeze for 5-6 hours. Your kid will be one happy kid that day. That is why I make so many popsicles during holidays.
Ingredients:
Mango – 1
Curd / Yoghurt – 1 cup
Sugar to taste
Procedure:
In a mixer jar add peeled and cubed mangoes and beat until the pulp is smooth.
Add curd and sugar and beat until sugar is dissolved and the mixture is light and airy.
Pour into popsicle moulds and freeze for 5-6 hours or overnight.
Place the popsicle mould in a bowl of water for 2-3 minutes and remove the popsicle from the mould.
