Last week, Madurai was so hot, I felt like running away to Munnar. Wherever I went, I took the pedestal fan along with me as ceiling fan was not doing its work properly. Working in the kitchen was the toughest job of all. But I had guests during that time, so couldn’t stay away from kitchen. My nephew is one of my fan when it comes to cooking. He loves most of the dishes I create and so if he visits, I make sure to prepare varieties of bakes and desserts. There were some mangoes and to beat the heat, I made these extremely delicious mango creamsicle for the kids.
This is not for those who want to reduce their calorie intake as it contains cream, mangoes and condensed milk. For just two mangoes, I got nearly a dozen of creamsicles. As I had only 6 popsicle moulds, I used my kulfi moulds for the remaining. This is so easy to make and it is so tough to just wait for it to freeze. I made it during night and the first thing we tasted is these creamsicles in the morning. It just melts in the mouth and is so creamy and full of mango goodness.
Ingredients:
Mango -2, medium sized
Full Fat Cream – 2 cups
Milk – 1 cup
Condensed Milk- 1 cup (adjust according to taste)
Procedure:
In a mixer jar add peeled and sliced mangoes and run the mixer unti;l it becomes a smooth pulp.
Add all the other ingredients and whip until everything is well combined.
Check sweetness and add more condensed milk if necessary.
Pour into popsicle moulds and freeze for 6 hours.
Place the moulds under running water for a minute and gently remove the creamsicles out of the mould.
Serve them with sliced mangoes and enjoy!

Step 2 you have used the word WHIP other ingredients into pulp. Just wanted to confirm you mean whipping them with hand beater ??
If yes then at what speed and for how long ?

You can either use a hand beater or just a whisk to combine all ingredients.
