How many of you have tasted paal ice? For those who doesn’t know what is paal ice, it is like kulfi and during summer, there are so many street vendors selling paal ice in small carts. They come to every street and stop at every house. All the kids would run with small tumblers to get their portion. Once I grew up I stopped tasting those as I used to catch cold immediately. I stayed away from paal ice for long. When my daughter was 2 years old, when we went to MIL’s house, she bought one for her. From that day, when ever she goes to Theni, she will surely get paal ice. But still I don’t try it as I am so much afraid of cold. There are two types of ice available. One is the usual and the other is special. The special will have coconut and will be slightly larger than the usual ones. We always go for the special ones. Some times they even buy two per head. Having the ice in both hands, it is just a visual treat to look at kids licking both at the same time. As heat is increasing here in Madurai, There is always a popsicle in my freezer. I have tried three varieties so far and the fourth is setting today. But I am not getting time to post about these yummy treats. Here is my second popsicle for this month.
When I decided to try it at home, I went through so many recipes. Most of the recipes used condensed milk to make it richer and creamier. But as I wanted to recreate the original paal ice, I didn’t use condensed mil in my recipe. The only ingredient I could think of which is simple, easy on purse and which gives a thick texture is corn flour. So I attempted paal ice with corn flour and I should say we were pretty amazed by the result. It was spot on and my daughter loved it. More than that what surprised me was my hubby loved it so much. I made it with one litre of milk so I got so many popsicles. After filling my popsicle mould, I also filled 6 kulfi moulds with the mixture and we had treat for 3- 4 days continuously.
Ingredients:
Milk-4 cups
Corn Flour-2 tbs
Sugar-2/3 cup
Cardamom Powder-1 tsp
Grated Coconut-4 tbs
Procedure:
Reserve 1/4 cup of milk.
Bring the remaining milk to boil.
Add corn flour to the reserved milk and mix well.
Add it to the boiling milk and keep on stirring.
Add sugar and cook until the mixture becomes little thick.
Remove from flame and add cardamom powder and coconut.
Allow it to cool completely.
Fill popsicle moulds.
Freeze for a minimum 8 hours.
For serving, place the mould below running water for 20-30 seconds and then pull the popsicle out of the mould.
Serve immediately.

Looks delicious! In fact, I made a similar recipe recently. Except that I added sugar BEFORE adding the thickener. Once the sugar started to dissolve in the milk, I let the milk boil for 5-8 minutes, constantly stirring. This reduced the milk and made for a really creamy version of the Paal Ice! 🙂
