Qatar, officially the State of Qatar, is an Arabian country is western Asia. It shares its border with Saudi Arabia in the south and the rest is surrounded by Persian Gulf.Qatari snacks are relished along with a cup of coffee. When I was searching for a cookie recipe, I couldn’t find any. There may be recipes but there are none in the search results. So then I searched for snacks and loved the look of these sweet dumplings. These are so much like donuts but very simple to make. The dough doesn’t have sugar and it is sweetened with a syrup like honey/ date syrup. 
The preparation hardly takes an hour to make a bowl full of luqaimat. As my new yeast is so powerful, the batter doubled within 20 minutes and I fried them in four batches which took another 30 minutes. By the time the batter was prooving, I made the sugar syrup and let it to cool. Yes, I didn’t go for honey as hubby is not a great fan. The syrup is drizzled on hot and crispy dumplings. The dumplings stay crisp on top and are very soft and fluffy inside. But the crispness stays only until the dumplings are hot. Once they cool, they become soft but still very delicious.

Makes 35-40 dumplings
Ingredients:
For The Dumplings:
Flour-2 cups
Instant Yeast-1 tsp
Sugar-1 1/2 tsp
Salt-a pinch
Cardamom Powder-1/2 tsp
Warm Water-1 1/4 cup
Mashed Potato-5 tbs
Oil-To Deep Fry
For The Syrup:
Sugar-1/2 cup
Water-1/2 cup
Saffron-a pinch
Procedure:
In a large bowl, mix together flour, sugar, salt, yeast, cardamom powder and mashed potato.
Add water to make a thick batter.
Cover and set aside until double.
In a pan bring sugar and water to boil.
Add saffron and let it boil until the syrup turns thick and sticky.
Allow it to cool completely.
Heat oil in a pan.
When the batter is double, take about 1/2 tbs of batter in your hand and allow it to slide into oil.
The dumpling will become double in size.
Fry until the dumplings are golden and crispy. Maintain oil temperature moderately hot.
Remove the dumplings on to a plate.
Arrange them on a serving plate, drizzle them with the syrup and serve.

Luqaimat - Qatari Sweet Dumplings
Ingredients

- 0.5 tsp Cardamom Powder
- 1.25 cups Warm Water-1
- 5 tbs Mashed Potato
- Oil To Deep Fry
- For The Syrup:
- .5 cup Sugar
- .5 cup Water
- 1 pinch Saffron
Instructions
- In a large bowl, mix together flour, sugar, salt, yeast, cardamom powder and mashed potato.
- Add water to make a thick batter.
- Cover and set aside until double.
- In a pan bring sugar and water to boil.
- Add saffron and let it boil until the syrup turns thick and sticky.
- Allow it to cool completely.
- Heat oil in a pan.
- When the batter is double, take about 1/2 tbs of batter in your hand and allow it to slide into oil.
- The dumpling will become double in size.
- Fry until the dumplings are golden and crispy. Maintain oil temperature moderately hot.
