Puttarisi / White Sticky Rice Pudding

Ever since I made Kavuni Arisi / Black Sticky Rice Pudding, making this white sticky rice pudding has been in my list of to do dishes. Pavithra in her comment has mentioned about this dish and only then I knew that there was white sticky rice available in Madurai. Every time I vist a shop or a store, I ask them about this white sticky rice and no one knew about it. But I didn’t let it go. And when I saw a pack of white puttarisi/ white sticky rice in a super market, I grabbed a pack. Two days back, I tried Pavithra’s recipe for the pudding. It became hubby’s favourite pudding. It was so tasty when served warm and also in room temperature. The flavour of the dish is mainly from the rice and we don’t add cardamom for some extra flavour. I should thank Pavithra for introducing me to this superb easy dish.

For those who don’t know what puttarisi is, here is a snap. It is whiter than the usual rice and is sold in small packs. the recipe is quite easy to make. Pressure cook rice with milk, then add sugar, coconut and cashew. It makes a great offering to God. I will be making this for my Navrathri Pooja.

Makes a bowl full

Ingredients:

White Sticky Rice/ Puttarisi – 1/2 cup

Milk- 1 1/2 cups

Sugar-1/2 cup

Grated Coconut-2-3 tbs

Cashew nuts -2 tbs

Ghee-2 tsp

 

Procedure:

1. Wash rice once and drain water.

2. Add milk and pressure cook for 6-7 minutes on medium flame.

3. In a pan heat ghee and add cashew.

4. When it astarts turning brown, add in the coconut.

5. Saute for a minute.

6. Keep flame low for rice, add the sugar and roasted cashew and coconut.

7. Mix well and cook until sugar dissolves.

8. Remove from flame and serve hot or warm.

  1. Is it glutinous rice? If it’s glutinous rice the addition of coconut milk and boiling the rice with screw pine leaf gives it excellent taste and aroma

  2. Hi, looks very tasty. I have tasted only black kavvuni arisi. Will you tell me in which shop you bought ?. So that I can try that too.
