Last week I reviewed Fortune Rice Bran oil and made crackers as part of the post. As it turned out nice with out the hint of rice bran oil’s flavour, I wanted to try out more bakes with it. Last time when I made chocolate cake, my daughter was very disappointed that I didn’t save her any leftover pieces. So I promised her to make another chocolate cake. Today I tried this cake with rice bran oil and it turned out absolutely delicious. The crumb was so soft and fluffy. The cake was also very moist and my daughter couldn’t wait until I took the photos. This time I used egg replacer which I ordered online as the cake substitute. I am very happy that it works well in the recipe. Need to try out more recipes with the replacer too. The cake is very simple to make and as for decoration, just sprinkle some cocoa on top to get a gorgeous cake. It tasted very chocolatey and my daughter was so happy that mom kept her promise. Â I used egg replacer in place of 2 eggs. If you are using an egg replacer see how many tsp for one egg and add accordingly.

I want an option for egg replacer,we don’t get it here in mumbai (India)
Aabha, instead of the egg replacer and 1/2 cup of milk, use half cup of curd. It is best substitute for egg.

Hi Kavitha, I bought it online at gourmetco. But now it is out of stock. It is Organ Egg Replacer and I have no idea where it is available in Chennai.

wanted to know if I want to courier eggless cake to my grandmother.. what things should keep in mind..i think it will a day to deliver the cake. what kind of flavors will keep well.( I think fruit flavors like banana and apple will go bad)..

Mostly cakes stay good for 3-4 days in room temperature. But for courier, there will be heat in the transport. So make sure that the cake stays cool inside the box. I think adding some dry ice in the box does the trick. I have heard friends using this for long journeys. Cling wrap the cake with three or four layer of wrap and then again wrap in a bubble wrap. Cakes with fresh fruits are not suitable. Oil based cakes are good and even nut based and dry fruit based cakes also stay good.
