I used to love puttu during my school days. When ever I asked for it, my mom prepared it for me. After marriage, I don’t prepare it often. When hubby went to Dindugal on a trip, there was a hotel famous for nei puttu. They fold it in banana leaves and he would bring it home. It was so soft and fluffy flavoured with ghee. I wanted to try that version at home. Instead of adding sugar I added palm sugar and it came out really nice. Mom never adds ghee in puttu. This is just a variation of both puttu recipes. Sugar/ Palm Sugar-1/4cup-1/3cup(add according to your taste)
1. Soak rice for 2hours.
2. Wash drain and spread it on a white cloth and leave it for 1 hour.
3. The rice should be wet to touch the grains should be separate.
4. Grind it into a fine powder in a mixer grinder.
5. Sift it through a sieve to get rid of larger particles.
6. In a pan dry roast the flour until the texture is like dry sand.
7. Transfer to a plate and allow it to cool.
8. Grind it again in a mixer grinder to make it into a smooth flour.
9. Take this flour in a large plate.
10. Sprinkle water and rub it until the flour resembles bread crumbs.
11. Pass it through a metal sieve.
12. Place this flour inside a steamer and steam cook for 15minutes.
13. In a bowl add coconut, sugar, ghee and cardamom powder.
14. Mix it well.
15. Add the cooked flour into this mixture and mix until completely incorporated.
16. Serve it immediately.
