Lemon Pickle

There are two types of lemon pickle which I learned from mom. One is preparing pickle with fresh lime and the other uses preserved lime. Here I am giving the recipe for preserved lime pickle. Preserving lemons is a very easy job. Just cut the lemons and mix them with salt and they will stay good for more than an year. Whenever you want pickle, just heat oil and add some of the preserved lime and prepare pickle. It is a 5 minutes work and it tastes great. 
If you feel dizzy or acidic, preserved lime comes for your help. Add some paste of the lime and add soda. Stir well and drink. You will feel very much better.
Those who are pregnant and yearn to eat something tangy can take a small piece of lime and lick it. It tastes divine.


Preserved lime
Ingredients:
Lemon-10
Salt-1/4cup

Procedure:
1. Wash and wipe the lemons.
2. Cut them to small pieces. Do not remove seeds.
3. Add salt and mix well.
4. Keep it in a plastic jar.
5. For 2 or 3 days just stir it once a day.
6. When the lemon changes colour, it can then be used for this pickle. This stays good for a year.

Pickle

 Ingredients:
Preserved lime-1cup
Sesame oil-1/4cup
Red Chilly Powder-1/3cup
Methi powder-a pinch
Mustard and Urad dhal-1 tsp


Procedure:
1. Heat oil and splutter mustard and urad dhal.
2. Add the lime preserve and red chilly powder. Mix well.
3. Add the methi powder, stir once and switch off flame.
4. After cooling, transfer pickle to an airtight jar and enjoy.
