Semiya / Vermicelli Upma

This is my favorite upma. This goes very well with coconut chutney or onion chutney. You can add vegetables of your choice. The recipe is very simple and can be prepared in a jiffy.

Ingredients:

Vermicelli-1cup
Water-1 1/2cups
Carrot-1
Green Peas- 1/8cup
Onion-1
Tomato-1
Green chilly-2
Oil-2tsp
Mustard and urad dhal-1tsp
Curry leaves-4
Coriander leaves-2tbs
Salt-to taste

Procedure:

1. Dry roast vermicelli till golden brown.
2. Heat oil and add mustard and urad dhal. When splutters add curry leaves.
3. Add onion, green chillies and saute till translucent.
4. Add carrot and green peas. You can add any vegetable you prefer at this stage(beans, capsicum etc)
5. After 1 minute add tomato and stir till the mixture becomes dry.
6. Add water and salt to taste.
7. When water starts boiling, add the roasted vermicelli and switch flame to medium high.
8. When it is 90% cooked cover pan with lid and switch flame to low.
9. Stir in between to avoid burning.
10.After 1 minute switch off flame and let it stand for 5 minutes.
11. Garnish with chopped coriander leaves and serve.
