Yogurt Mango Chia Pudding – Easy No Cook Dessert Recipes

For the third day of easy no cook desserts, here is an exotic recipe using simple ingredients. And it doesn’t involve cooking. How good is that? When I star with recipes, I don’t get ideas at the beginning, but as I try one or two recipes, I go creative. I am a bit slow in that department. So I needed to try chia so many times to get ideas and I am really proud of this pudding I made. It is a layered dessert. Start with sweet hung curd at the bottom, then comes the mangoes and finally chia seeds. When you combine the three in a spoonful, the result is just divine.

 

 

For the hung curd, I used stevia, but you can use any sugar or sweetener you want. Only the yogurt is sweetened. The chia layer is made with little salt. I didn’t want the whole dessert to be overly sweet as mangoes also go into it. You need something to cut down the sweetness and chia layer does that. But if you have an extremely sweet tooth, add a little sugar to chia layer also. The final batch of mangoes are there in the market and I didn’t want to miss them. I used firm mangoes to cut down on the sweetness again. But it is just me. There are no set rules for making this. Do it as per your liking. All the components can be made ahead and can be assembled for parties. It would be so much easier.

 

 

Serves 1

Ingredients:

Curd/ Yogurt – 1/2 cup

Sugar – 1 tbs

Cardamom Powder – 1/4 tsp

Milk – 1/4 cup

Chia Seeds – 1 tbs

Salt – a pinch

Mango – 1/4 cups, cubed

Pistachios

 

Procedure:

Pour the curd in a cloth lined sieve and place it on a bowl.

Arrange this set up in fridge for 2 hours.

Remove the hung curd, mix it with sugar and cardamom powder and refrigerate until assembling.

Mix milk, salt and chia seeds and set aside for 2 hours in fridge.

Keep stirring it so that the seeds absorb milk uniformly.

Peel and cube mangoes.

Take a tall glass, add the sweet hung curd in the bottom.

Top it with cubed mangoes and then the soaked chia seeds.

Garnish with more mango cubes and sliced pistachios.

Serve immediately.

  1. mango chia pudding looking such comfy dish right now. Not yet added mangoes in chia seed. I dont like US mangoes.
