Pavakkai Vatral

This is the third day of the week long blogging marathon. Bitter Gourd is one of the vegetables many dislike because of its bitter taste. But it is very good for our health. This vatral tastes great. It is so crisp and makes a great accompaniment for curd rice. Important thing is that it will not taste bitter. The procedure is a very easy one. We enjoyed relishing it.



Ingredients:
Bitter Gourd/ Pavakkai-1kg
Sour Curd-1/2lt
Green Chilly-8
Asafoetida-1/2tsp
Salt-2tbs

Procedure:
  1. Wash and cut bitter gourd into thin slices.
  2. Boil water, switch off stove and soak the sliced bitter gourd for 1 hour.
  3. Spread a clean cloth on your terrace and spread the bitter gourd pieces.
  4. Grind green chillies and asafetida to a smooth paste.
  5. Add salt and the green chilly paste to curd and mix well.
  6. In the evening, add the bitter gourd pieces to the curd mixture and let it sit overnight.
  7. The next day, remove the bitter gourd pieces from the curd and spread on large plates. Keep it on the terrace to dry.
  8. In evening add the dried pieces to the remaining curd and mix well. Again let it sit overnight.
  9. The next day, there will be no curd left.
  10. Dry the bitter gourd pieces in sun for 2-3 days until they are completely dry.
  11. Store in airtight container.
  12. Deep fry in hot oil and relish with curd rice.

  1. Adding curd and green chilly is new to me. I guess it may help in mellowing the bitterness. Every year I prepare a batch of these vattals for my vethakuzhambu.

  2. Used to have store bought ones till now or MIL used to make these ! looks easy to make too ! and hubby loves karela in any form 🙂 Only thing I need to look for a terrace now !! 🙂 LOL !

  3. I can almost taste the crunchy and slightly bitter munchies. I dont think I’ve ever eaten these, but they definitely sound delicious. Good one.

  4. Gayathri, that is an interesting recipe!! Preparation looks similar to dried green chili soaked in butter milk.. I like bitter gourd, despite it’s bitter taste.. Will try this this summer…
