For the third day of Blogging Marathon #30, under the theme tea kadai menu, I selected ragi cookies / kelvaragu biscuits. I have seen and tasted ragi cookies but had no idea what ingredients go into it. So I used my wheat cookies recipe and substituted half the wheat flour with ragi flour. It came out so delicious and crispy and crunchy. No one could taste ragi in the cookies and it was so buttery. So if you are planning to do a healthier version of cookies you can use this recipe. The cookie dough must be crumbly. Though shaping of the cookies is little tough, the end result is awesome. The preparation of these cookies is very easy and you can make 2 dozen cookies with in half an hour.
Makes 2 dozen cookies
Ingredients:
Butter-1/2 cup
Caster Sugar-1/3 cup
Wheat Flour-2/3 cup
Ragi Flour-2/3 cup
Vanilla Essence-1 tsp
Procedure:
1. Cream together butter and sugar.
2. Preheat oven to 175C.
3. Add vanilla to the butter and mix.
4. Add the flours and mix to form a crumbly dough. When pressed between your palm and fingers the dough must hold its shape and when crushed it must crumble.
5. Divide dough into 24 equal portions.
6. Shape each portion into a ball and flatten it. Make sure the surface is smooth.
7. Arrange on a lined baking tray.
8. Bake for 10-12 minutes.
9. When the base of cookies start changing colour, remove from oven and allow it to stand on tray for 5 minutes.
10. Once it is cool enough to handle, transfer cookies to a wire rack and cool completely.
11. Store in air tight jar..

i am sindhu from Thiruvannamalai Town.mam i love baking cookies cake and more varieties but. i dont wat brand of baking powder , baking soda, yeast and all to use .i want gud result. i bought 60 liters morphy with me.i made some cookies cakes.but not too much gud n soft.and more over i want to know abt d baking process. mam u pls help me.
Hi Sindhu, start with what brand you get in your town. Usually we buy all these ingredients from whole sale essence shop which serves bakeries. Find out one like that in your place and buy from them. Baking can be perfected only with practice. You need to understand your oven before you can get good results. Please follow my baking basics series to know more about baking..

Can I use granulated sugar in place of caster sugar?
Run the granulated sugar in mixer grinder until powdered. Use it instead of caster sugar.
