This is a nutritious paratha and I made it for my daughter. She loves layered parathas. I usually prepare layered paratha with ghee for Sruti and this time I added palak puree to the dough to make more colourful and nutritious. She liked it very much but PK was not very happy. I made paneer butter masala to go with the parathas. He liked the gravy and was disappointed with the paratha. The layers are not visible in this parathas. But when you tear a piece you can see the beautiful layers inside. I got this idea of layering paratha from Tarla Dalal’s cookery book.
Ingredients:
- Mix all the ingredients in a bowl and add water little by little to make a soft dough.
- Cover and keep it aside for 30minutes.
- Divide the dough into 8 equal portions.
- Roll out each portion into a thin large circle.
- Apply oil on the surface.
- Roll the disc from one edge to form a log.
- Roll the log into a small circle.
- Dust with flour and roll it into a thick disc.
- Cook on tawa until both sides are golden.
- Serve hot with gravy of your choice.
