It has been a while since I blogged. Last month I went on a tour to Hyderabad to meet some amazing food bloggers. I will write about it next week, but this week we will check out some delicious easy to make cookies. For the first week, I have chosen the theme cookies and for the first day, it is cookies made with whole wheat flour and oats. I have been obsessed with baking with oats as I feel that it makes the whole food healthier. As one of hubby’s friends was supposed to visit us, I made this batch of cookies for the guests. But they never came. So I packed all of them for hubby’s office where the whole box disappeared immediately.
The procedure of making these cookies is somewhat similar to pie crust. Ice cold butter is added to flour for a flaky texture. If you check the recipe, there is no liquid involved. The whole dough is made with butter so the final cookie is melt in the mouth kind. As I added the choco chips in the dough itself, I added some chopped pistachios on top for a nice look. Aren’t they beautiful? The addition of whole oats also adds some beauty to it. That is why I have added both oats flour and whole oats. For the oats flour, just run the oats in mixer grinder until fine. Use unsalted butter in the dough.
Ingredients:
Oats Flour – 100 gm
Whole Wheat Flour / Atta – 100 gm
Brown Sugar – 100 gm
Ice Cold Butter – 150 gm
Quick Cooking Oats – 50 gm
Chocolate Chips – 50 gm
Chopped Pistachios for topping
Procedure:
Run oats in mixer and make a fine powder.
Add whole wheat flour and brown sugar and mix well.
Add in cubed cold butter and rub until it makes a soft dough.
Finally add the 50 gm oats and chocolate chips and mix well.
Cover and refrigerate until firm.
Preheat oven to 180°C.
Make small balls out of the dough, press to form a cookie and add some chopped pistachios on top and arrange on a greased baking tray.
Bake for 15 – 20 minutes or until golden in the preheated oven.

They turned out super yumm, I made a mistake earlier with measurement after baking one cookie in the oven, I realised the flour is less, i added more and they turned delicious. I just used salted butter instead of unsalted.
