Sugar Free Chocolate Banana Cake – Easy Low Carb Recipes

While baking for a whole month, how can I not bake for myself? So this month I will bake some dishes just for myself. The recipes would be low carb and gluten free perfect for my diet. As I am near my goal, I have started being lenient in the diet. I take fruits occasionally. One of them is banana. I mostly use it as a sweetener in recipes which helps in avoiding stevia or erythritol. And I also love banana flavour, so I am extremely happy when I make these treats for myself. Recently I came across a two ingredient pancake recipe, which has just eggs and banana. I make it regularly for Sruti. Her favourite is the chocolate version which I made into crepes (check out the recipe) And then looking at the texture of the crepes, I wanted to try it as a cake.

 

 

So I made this one day for my lunch. Yes, I have cakes for lunch just to finish my eggs. I added a little bit of baking powder to get the fluffiness of the cake. I was so excited when the cake rose in the oven. It turned out amazing. I used a small banana, because I didn’t want to make it too sweet. For me it was perfect, because I love bitter cakes nowadays. But please add an extra banana or use a larger one if you are making it. It would give the necessary sweetness. Look at the texture! For just three ingredients, it has come our pretty good. But never compare a normal cake with a low carb cake. They are different, but this satisfies that cravings without going off the diet. I have used 99% dark chocolate for topping. But use whichever chocolate you prefer. If making for kids, use a sweet chocolate and more bananas. They would love it.

 

 

 

Serves 2

Ingredients:

Egg – 2

Banana – 1

Baking Powder – 1 pinch

Dark Cocoa Powder – 1 tbs

Dark Chocolate – a few pieces

 

Procedure:

Preheat oven to 175°C.

In a bowl take eggs, banana, cocoa powder and baking powder.

Using a hand blender, blend it into a smooth batter.

Grease and dust two ramekins with cocoa powder.

Divide the batter between the ramekins and top it with chopped dark chocolate.

Bake in the preheated oven for 15 – 20 minutes or until a tooth pick inserted comes out clean.

Allow it to cool a little before removing the cake from the ramekin.

Cool completely and enjoy!

  2. Very innovative ! And the cake looks absolutely fantastic . The one time Eggfree baker is using eggs , and that too for lunch ! Yes reaching your goal is important , good luck , though I think your more than perfect now
