For the final day of summer salads, I have a recipe which is almost a dessert. I always look forward to tasting mangoes in summer. My dad, then me and now my daughter are crazy of mangoes and can have it on all days. As Sruti was ill at that time, I made it for myself. With being in diet, I have started avoiding mangoes and when I slice it up for Sruti, I taste a small piece so that I don’t hit that craving. But on the day I made this, I selected a small mango just for myself and as for the additives, you can use any crunchy ingredient.
If I make it for Sruti, I was thinking about praline topping, but as it is for me, I went with simple nuts. I also added some cardamom powder so that it gives the feel of a dessert. And yes, it was amazing and I enjoyed every cube of that mango. As I was aiming for salad, I bought a firm mango which was slightly raw and that tang was so good in the salad. I wanted to add onions, but as the salad was a substitute for dessert, I decided not to add. But go ahead and add onions, green chillies and salt pepper for a different flavour.
Firm Ripe Mango – 1
Salt – a pinch
Cardamom Powder – a pinch
Pistachios – 5
Almonds – 5
Peel mango and slice it into small cubes.
Add salt, cardamom powder and half the chopped nuts and mix gently.
Transfer to a serving bowl, top it with the remaining nuts and serve immediately.
