Cucumber Carrot Salad – Easy Summer Salad Recipe

For the second day of summer salads, here is a simple yet delicious and filling salad made with cucumber and carrots. I used a little bit of yogurt for dressing which makes it a real good treat for this summer. I add raw veggies in diet daily and cucumber and carrot takes an important place in that. The coolness of cucumber and the sweetness of carrot along with their textures give a nice crunch in the salad. I kept it simple without any toppings, but you can add any crunchy topping if you like. My choice would be almonds as always.

 

 

As I mentioned yesterday, I don’t do elaborate dressings. I keep the salads simple and don’t stock up mayonnaise or any other dressing ingredients. As for mayonnaise, I am yet to try out home made version. The ones available in stores have so many added chemicals and sugar and I am not at all interested in buying. I am thinking of trying the egg version soon. If I succeed I will share it with you. If you like mayonnaise you can add it in this salad. I use salads as a way to satisfy my cravings and so the flavours in it depend upon what I am craving for that day. I didn’t have any unusual craving when I made this salad, so it is pretty simple and straightforward.

 

 

Serves 2

Ingredients:

Cucumber – 2

Carrot – 2

Curd / Yogurt – 2 tbs

Salt and Pepper To Taste

Roasted Cumin Powder – 1/4 tsp

Coriander Leaves – 2-3 tbs

 

Procedure:

In a bowl mix together yogurt, salt, pepper, cumin powder and coriander.

Peel and cube carrots and cucumber into bite sized pieces.

Add the dressing and toss them gently so that they are well combined.

Serve it immediately.

  1. My kind of salad, with simple vegetables and ingredients, how delicious this salad looks. I love my salad with yogurt dressing. Looks absolutely creamy and catchy.

  2. Beautiful easy peasy salad recipe. As you said having chemicals in storebought dressing, I too dont prefer buying them. Its good idea to have whole food without fancy ingredients.
