After starting my paleo diet, the one thing I crave for is watermelon. Being in a weight loss diet, even fruits are prohibited, but if you are in for a life style change, then there is no issue with eating fruits. And for this summer, water melon can be the best fruit. So many times I see this combination of feta cheese and water melon, I used to wonder how it would taste like. And one fine day I had both the home made feta and some water melon and thought why not try it.
I need to warn you again, if you are on weight loss, don’t try this. I actually had this for my afternoon snack. After starting my Intermittent fasting, I have only two meals a day. One at 9 am and the other at 4:45 pm. But in between I try to have some snack so that I don’t feel hungry until 4 pm. Salads make a nice snack as far as the portion is less. So this one makes an incredible snack which keeps me full for another 3-4 hours. The recipe is quite simple to put together and tastes fantastic.
Watermelon – two wedges
Feta Cheese – 2-3 tbs
Himalayan Pink Salt – to taste
Pepper – to taste
Mint Leaves – for garnish
In a bowl mix together cubed water melon, salt and pepper.
Transfer to a plate.
Crumble the cheese and sprinkle over the water melon cubes.
Tear the mint leaves and garnish the salad.
