Time flies so fast and we are in the third week of Blogging Marathon this month. For the third day, I have chosen the theme Holiday Dishes. My kiddo enjoyed nearly one and a half months of summer holidays and went to school only today. Keeping kids occupied during holidays is a difficult job and filling their tummies is too much hard work. Whenever my daughter gets bored, she asks for snacks. And I had to control the amount given as there were so many snack breaks during the day. As summer was at its peak during holidays, I made lots of cool drinks, ice creams and chilled dishes to beat the heat.
Usually ice cream is made with a custard mixture mixed with cream or milk and sugar and frozen for nearly 5-6 hours. If there is an ice cream machine, it makes the job easier by churning the ice cream but for those who don’t own an ice cream maker, we need to remove the ice cream from freezer every 1 hour, give it a nice mix and then pop it back into the freezer. And only by properly mixing the ice cream mixture can we produce a nice soft lump free ice cream. So what if you can completely skip the churning process? Yes, this ice cream is made with just four ingredients and the only work you need to do is to whip the fresh cream. There is no churning involved or mixing for every one hour involved. How good is that? And the final ice cream is so creamy, melts in the mouth with out any ice crystals. Read on for the easy breezy recipe.
Heavy Cream (dairy/ non dairy) – 1 cup
Condensed Milk – 1/4 cup
Vanilla Essence – 1/2 tsp
Chocolate grated or chopped – 1/4 cup
In a bowl take chilled whipping cream.
Beat it with a hand mixer until stiff peaks form.
Add condensed milk and vanilla and fold it gently until thoroughly mixed.
Add chopped chocolate and fold it well.
Freeze for 4-5 hours.
Scoop out and serve immediately.
