Easy Feta Salad

When I went to Chennai, I purchased a block of Feta cheese in brine. It was quite expensive and it was way before I tried my hand at making feta cheese at home. Feta in brine is extremely salty. The salt in the brine preserves the cheese but it also make it way too salty. So if you are opting for store bought cheese, wash it under running water to get rid of some salt. And make sure to check the cheese for salt before adding salt in your recipe. I haven’t added salt in any dish using feta as the salt in the cheese itself was enough to flavour the whole dish.

Feta is the star ingredient of this salad. All the other ingredients are so simple. Even the dressing is only lemon juice which adds the necessary tang. This salad is so easy to put together and tastes absolutely delicious and looks so colourful. You can add any vegetable of your choice. I have added tomato and cucumber and for garnish I used coriander leaves.

Ingredients:

Tomato-2

Cucumber-1

Crumbled Feta Cheese-1/2 cup

Pepper and Salt to taste

Lemon Juice-2-3 tbs

Coriander Leaves for garnish

Procedure:

Cut tomato in half, remove seeds and dice into small squares.

Peel cucumber, cut, remove seeds and dice into small cubes.

In a bowl mix together tomato, cucumber, feta, lime juice, salt and pepper.

Arrange in a salad bowl and garnish with coriander leaves.
