Eggless Marble Cake

For the third day of  the final week of Blogging Marathon#20 I decided to make use of the fluted tube pan I bought from Chennai. Though I have posted many cake recipes, I haven’t yet posted the marble cake. So I tried it out today. The cake was not so pretty. I should have used a knife to make the marbling pattern instead of tooth pick. But the taste was absolutely delicious. The cake is slightly sweet and the icing balances the sweetness needed. I used cocoa powder icing but if you want a chocolaty version you can go for melted chocolate. My daughter had a small piece and she enjoyed it a lot. I also enjoyed baking in my new pan. Ingredients:
For The Cake:
Butter-1/2 + 1/8cup
Granulated Sugar-1 1/4cups
Flour/ Maida- 2 1/4cups
Baking Powder-3/4tbs
Curd/ Plain Yogurt-1/2cup
Milk-1 + 1/4cups
Vanilla Essence-1tsp
Cocoa Powder-1 1/2tbs

For The Icing:
Cocoa Powder-1 1/2tbs
Powdered Sugar-1 1/2cups
Hot Water-2-3tbs

Procedure:
1. Preheat oven to 180C.
2. Grease and dust a 9″ fluted pan.
3. In a bowl mix flour and baking powder and mix well.
4. In another bowl beat butter and sugar until fluffy.
5. Add vanilla and curd and beat again until fluffy.
6. Add in 1 cup of milk and flour and mix with a wooden spatula.
7. Divide the batter into 2 equal portions. To one portion add cocoa powder and 1/4cup of milk and mix to combine.
8. Drop spoon full of white batter leaving space for chocolate batter.
9. Filled the left out spaces with chocolate batter.
10. Add another layer of batters by placing chocolate batter on vanilla batter and vanilla on chocolate.
11. With a knife, make spiral motions inside the batter to obtain the marble effect.
12. Do not over mix.
13. Bake for 20-25minutes or until a tooth pick inserted comes out clean.
14. After 5-10minutes, invert the pan on a wire rack and remove pan.
15. Allow it to cool completely.
16. In a bowl sift together sugar and cocoa powder.
17. Add hot water until it reaches a pouring consistency.
18. Pour the icing on the cake.
19. Allow it to set.
20. Carefully transfer the cake on to a serving plate.
21. Slice it up and serve.

Chocolate Batter.


Grease and dust the pan.



Place batters alternately.


Add layers until the batters are completely over.


With a knife ( I used a tooth pick, but the result will be nice when using knife) and make spiral motions inside the batter to get the marble effect.



Bake until done.


Cool on wire rack.


Pour the icing over the cake. Allow it to cool.



Transfer to a serving plate.



Slice it up and serve.

  3. Hi gayatri iam using 28 ltrs Morphy Richards otg everytime i bake a cake the upper layer of the cake gets burnt. Please tell me how to preheat and for how many mins it should be baked on which rack in detail. Please reply

    1. You need to preheat oven to 10 minutes. While baking, place the tin in the middle rack. If you feel that it is browning fast, place an aluminium foil on top of the tin. This is called as tenting and it slows the browning on top.

  4. Hi gayathiri cook spot , have a doubt? can i substitute 1/2 cup ygurt/curd with 2 eggs, will it come good as yours? and whats the purpose of 1/8 cup butter, why yu divide butter into 2 portion..

    1. I haven’t tried substituting like this. But it may work. And I am not dividing the butter. It is just that the butter quantity is 1/2 cup and extra 1/8th cup.

  6. Hi, I tried this cake today..while yours looks awesome, mine was a disaster 🙁 to start with it didnt have the marble look and then the cake was uncooked in the centre. Also the icing was too sweet in taste 🙁 can u please tell me where I went wrong? If possible please upload a video recipe of the same. Thanks in advance 🙂

    1. The cake needs a little bit more time in the oven. And for the marbling part, it all depends on how you swirl the batter. As the icing is full of icing sugar, it would be sweet. You can decrease the amount of icing used or go for a non iced cake if you feel it very sweet.

    I baked this marble cake in an 8inch round pan…it took about an hour to cook…. it collapsed in the middle while cooling down on a wire rack….what could have gone wrong….is the pan small for this batter?

  8. Hi. Firstly , let me just thank you for the wonderful eggless vanilla cake recipe. I had tried so many recipes earlier and after several attempts, eventually gave up. As a last try I tried your recipe and voila !!! the cake turned out to be the best eggless vanilla!!
    Also , can we substitute butter with oil ?
    Can I make marble cake using your vanilla recipe. I’m confident about that now

    1. Hi, you can do that. Check my best chocolate cake recipe too. You can combine both to make marble cake. And you can sub melted butter for oil in both recipes.

    1. A cake recipe can have any type of leavening like baking powder, baking soda, eggs, yeast or a combination of any two or more leavening agents. There is no particular rule in using both baking powder and baking soda together. I hope this helps.
