DIWALI SWEETS - SWEETS

Thekua / Khajur

For this month’s ICC Srivalli chose a snack from Bihar. Known as thekua or khajur, it is a deep fried biscuit made from all purpose flour. Usually a mould known as saancha is used to make some designs on the biscuits. As I don’t have a mould, I used my seepu seedai achu to make the lines on the biscuit. You can also use a fork  instead. It was so crispy and flaky. I had to skip sooji because I didn’t have stock and I saw it only while mixing the dough. But this version was also nice. 


Ingredients:
All Purpose Flour-1cup
Powdered Sugar-4tbs
Ghee-4tsp
Grated Copra-2tsp
Cardamom Powder-a pinch
Oil-For Deep Frying

Procedure:
1. Mix flour. sugar, copra and cardamom powder.
2. Add ghee and rub the flour to mix it to a crumbly flour.
3. Sprinkle little water and knead the flour into a crumbly dough.
4. Heat oil in a pan.
5. Roll out the dough to a 1/2cm thick round and cut out biscuits with a cutter of your choice.
6. Grease the mould and place the biscuit on it and press it to make impressions.
7. Deep fry on medium heat until golden.
8. When cool store in airtight jar.


Mix the dry ingredients and ghee

Rub it well to make a crumbly flour

Sprinkle water to make a crumbly dough

Roll out and cut into shapes

Press it against the mould

Place on a plate

Deep fry till golden

Thekua was so flaky and crisp
