For the second day of regional side dishes, I have a Sikkim dish which I made during the Mega BM Biryani and Pulao festival. For Sikkim I posted the recipe for a simple rice Chambray which is usually served along with the flavourful til ko aloo which is nothing but potatoes flavoured with roasted sesame powder. I usually add a tsp of sesame seeds in my potato roast as it enhances the flavour a lot. When I read about this Til Ko Aloo, I thought that it was the same, but when I read further, it sounded very different from the version I make. That surely gave the inspiration to try. The taste of sesame powder enhances the whole dish. And when served with chambray, this makes an awesome pair. My daughter enjoyed both as potato is her favourite vegetable.
Ingredients:
Potato – 4
Onion – 1
Salt – to taste
Red Chilly Powder – 1 tsp
White Sesame Seeds – 2 tsp
Oil – 2 tbs
Procedure:
Peel and cube potatoes.
Heat oil and add onions.
Fry until transparent.
Add in the cubed potatoes and cook on low flame until soft.
Dry roast sesame seeds and powder them.
Add salt, red chilly powder and sesame powder to the potatoes, stir well and cook for a minute or two.
Serve it hot with Chambray.

Till Ko Aloo Recipe
Ingredients
- Potato - 4

Interesting, I use sesame seeds a lot in vegetable fries but never to potato fry. It looks delicious and . so does Chambray. Sounds like a comforting and a filling meal!
There are so many versions to dry roasted Potatoes and each of them is delicious with its flavor variation. Great to see the sesame seed flavored potatoes, it’s no wonder Shruti loved it!
Sesame seeds is a favorite of mine. Love this idea of using it in powder form. Have to try this asap! Such a unique pick!!
I have used whole sesame seeds but I think powdered seeds would add a very different flavor. Nice one.
Wow! As Usha mentioned, I add sesame seeds in many curries but never thought to add in aloo sabji. Bookmarked.

That is a very interesting and delicious looking potato curry. Never added sesame powder to potatoes – will have to give this recipe a try sometime.
I made that combo for the Sikkim state when doing Indian regional dishes for the mega marathon and remember loving these dishes very much. Simple and flavorful.
