Low Carb Banana Marble Cake Recipe – Easy Low Carb Recipes

We are hard core foodies and you would have guessed it if you have gone through the blog. I always look forward for an occasion to bake because I love baking. It is therapeutic and I bake when I am depressed. Many of you can relate to it. But with all the baking, the end result is that I have put on so much weight and I had to do something to change it. Before two years, I completely changed our living style and shifted to low carb dishes in our daily diet. When I was new to the diet, I didn’t know what to bake and so I stopped baking. There was this desire to bake and as I couldn’t, I felt really bad. And one day I found about coconut flour. First it was MW cakes and when I made them good, I started trying the baked versions. I wouldn’t say that I got them right, but with practice, it got better. And now I bake daily for myself and I am so in love with all the dishes. Coconut flour is a boon to all those who follow a low carb diet and make sure you learn about it.

Though I bake daily, special occasions need special dishes, right? It was hubby’s birthday and I wanted to do special for him. He is not a cake person, but there are two of us who love cakes. So hubby’s birthday was an excuse for me to bake a cake. This happened during September and I reserved this cake photo for some special theme. What more do I need when I have Bake-a-thon? This cake is made with coconut flour and for sweetening, I have used banana. The recipe is really easy. Just chuck everything in the bowl and blend it. If you have a food processor, then use it. As I didn’t frost the cake, I wanted to give some festive look to the cake. So my favourite rose petals and pistachios. When I shared the photo in social media, everyone was asking for the recipe. I am sorry I made you wait so long, but it is worth it. The taste of the cake is so divine and a slice is enough to satisfy your sweet craving without fussing with the diet. And it is also very good to feed kids. My daughter loved it so much and I made it again for my birthday in October.

 

 

 

Ingredients:

Egg – 6

Banana – 2 medium sized

Salt – a pinch

Ghee – 4 tbs

Coconut Flour – 4 tbs

Baking Powder – 1 tsp

Cardamom Powder – 1/4 tsp

Cocoa Powder – 1 tbs

Instant Coffee Powder – 1/2 tsp

Pistachios and Rose Petals For Garnish

 

Procedure:

Preheat oven to 180°C.

Take banana, eggs, ghee and salt in a bowl and blend them thoroughly using a hand blender.

Add in coconut flour and baking powder and blend until smooth batter forms.

Divide batter into two.

To one portion add cardamom powder and mix well.

To the other portion, add the cocoa powder, coffee powder and mix well.

Grease and line a 6″ cake pan.

Pour the batters alternatively until all the batters are used up.

With the knife create swirls in the batter.

Bake the cake for 25 – 30 minutes.

Top with rose petals and slice pistachios.

Cool and serve.

I am sorry but I feel like crying… because I have baked all for the Bakeathon and now have no energy to bake, but your low carb recipes are so tempting that I am constantly fighting the urge to not try them! This marble cake is such a winner and especially with banana in it… I feel like baking it and dividing it into 3 to cover my macros… hehe… yes, that means I won’t share… 😉

  8. Really Gayathri, I too love baking and eating cakes but can’t due to increasing weight. If coconut flour helps , that is another reason for me to start using this flour in baking. The cake looks so moist and yum, no one can think it’s made using coconut flour.
