When I first read about the Odisha sweet Rasabali, I was immediately interested. Though we know that milk based Bengali sweets are famous, even milk sweets from Odisha are amazing. I came to know about this only after I started blogging, and as I was researching for milk sweets, I came to know a lot about odisha sweets. You will see many sweets this BM from Odisha. And this one is so yum.
Paneer patties are deep fried and soaked in thick sweetened milk and served as prasad. This is one of the sweets included in Chapan Bhog for Jagannath. The only doubt I had was whether the patties will disintegrate while deep frying. But the semolina and maida in the dough took care of it and the patties stayed intact through frying. As the patties don’t have any added sugar, the whole sweetness comes from the milk in which the patties are soaked. Either use sugar or condensed milk to the milk and adjust it according to the sweetness required. If you have malai paneer at home, the whole preparation takes nearly 30 minutes from start to finish. If you have silver varq, use it for garnish.
Ingredients:
For The Patties:
Paneer – 200 gm
Maida – 1 tsp
Sooji – 1 tsp
Cardamom Powder – 1/4 tsp
Oil
For The Milk:
Milk – 500 ml
Condensed Milk – 3-4 tbs
Pistachios – 1 tbs
Saffron – a pinch
Procedure:
For The Patties:
Mix together paneer, maida, sooji and cardamom powder and knead to form a soft dough.
Divide it into 9 equal portions and shape each into a ball.
Flatten them to form patties.
Heat oil in a pan and deep fry the patties until golden.
For The Milk:
At the same time, bring milk to boil in another pan.
Allow it to boil until it reduces to half.
Add in condensed milk and boil for two more minutes and remove from stove.
Add the paneer patties and let it soak until it cools down completely.
Cover and refrigerate for an hour or two.
While serving garnish with sliced pistachios and saffron.

No one can resist such luscious rabadi with those golden paneer delights .. Odisha has so many wonderful sweets which are not in limelight , even Rosogulla is said to be found in Orissa.
