Today is the fourth day of week long Blogging Marathon#11. Litti is the most famous dish of Bihar. It is stuffed with sattu (roasted gram flour) and spices. It is baked in oven. The crust is very crispy and the filling is delicious. It is usually served along with choka ( made with potato and brinjal) and a cup of ghee. When the litti comes out of oven, it has to be dipped in ghee. But I just gave a coating of ghee instead of dipping. As I don’t get sattu in Madurai, I prepared it at home. I just roasted channa dhal in a pan and ground it to a fine powder. This may not be the authentic version but it was great.
Ingredients:
For The Dough:
Maida-1cup
Curd/Yogurt-1/2cup
Salt-to taste
For The Filling:
Sattu-1cup
Clove-3pods
Ginger-a small piece
Salt-to taste
Nigella Seeds-1/2tsp
Green Chilly-2(finely chopped)
Cilantro-1/2cup(finely chopped)
Lemon Juice-1/2tbs
Mustard-1tsp
Procedure:
1. Mix flour, salt and curd and prepare a soft dough. Cover and keep it aside.
2. Mix all the ingredients for the filling and sprinkle water to make the filling little wet. It should resemble a crumbly dough.
3. Divide the dough into 8equal parts.
4. Divide the filling into 8equal parts.
5. Roll the dough into a small disc, place the filling in the middle and close the dough over the filling and pinch the edges.
6. Place the ball seam side down on a greased tray.
7. Finish with the remaining balls.
8. Preheat oven to 180C.
9. Bake the littis until they are brown. It took around 25-30minutes for the batch of littis.
10. Dip the hot littis in ghee and serve hot with choka or green chutney.
