Wheat Biscuits

These biscuits are so crunchy and are perfect for those who are calorie conscious. It has wheat flour and olive oil which makes it healthy and nutritious. We really enjoyed munching these biscuits. My daughter didn’t like it. I am thinking of preparing this with some butter for my kid. This is the recipe I adapted from the grissini recipe. I added rosemary and sesame for extra flavour.





Ingredients:
Wheat Flour-310gm
Water-1cup
Instant Yeast-1tsp
Olive oil-1tbs+2tbs
Salt-to taste
Sugar-2tsp
Dried Rosemary-1/2sp(crushed)
White Sesame Seeds-2tbs

Procedure:
1. Mix wheat flour,salt,yeast,sugar,rosemary well.
2. Mix water and 1tbs oil. Add the wet ingredients to the dry ingredients.
3. Prepare a soft dough. Knead the dough for 10minutes.
4. Oil a bowl, place the dough inside and rotate the dough to coat it with oil. Cover with wrap.
5. Keep it in a warm place for 2 hours or until doubled.
6. Punch the air out and knead for 2 minutes.
7. Sprinkle flour on the counter. Divide the dough into 4 equal parts.
8. Roll a portion into a square. Roll it little thicker than roti.
8. Apply a coat of oil. Fold it into half.
9. Apply a coat of oil. Fold the rectangle into three.
10. Now roll it again into a square. Cut it into small squares with a pizza cutter.
11. Grease a baking tray and arrange the cut squares on the tray without leaving space.
12. With a blunt object make some dimples on the squares.
13. Preheat oven to 200C.
14. Bake the biscuits for10minutes. The top will start browning.
15. At this stage, remove the tray from oven. Flip the biscuits and bake them again until well browned.
16. Cool on wire rack.
17. When completely cool store in airtight jar.

As I have posted many photos for preparing dough in the previous posts, I am starting from the doubled dough part.

After double in volume, punch down and knead for 2minutes. Divide into 4 portions

Roll a portion into a square and apply oil

Fold it into half and apply oil

Fold 1/3rd portion over

Fold the other portion on top of first fold

Roll into a square and cut into small squares

Arrange on a baking tray and bake

  1. It’s funny that two days back I tried to bake a Sesame wheat bread using exactly the same ingredients except that I used thyme and sesame, but the dough did not raise and the bread was a failure, but I am happy to see the same ingredients take the form of crispy biscuits here.
