This is my daughter’s favorite. She likes it so much that she thinks a lot before giving it to her dad .You can either use ghee or any vegetable oil or you can combine both to get delicious paniyaram. The paniyaram is a special south indian delicacy prepared in a kuzhi paniyaram pan.To the recipe…….
The Recipe:
Ingredients:
Raw rice-75gm
Boiled rice-75gm
Jaggery-150gm
Cardamom powder-2tsp
Grated Coconut-1/2 cup
Urad dhal- 2tbs
Menthiya seeds- 1tsp
Procedure:
1. Soak raw rice, boiled rice, Urad dhal and menthiya seeds overnight.
2. Grind it with little water. The batter should be thick.
3. In a vessel add powdered jaggery and 2tbs water and bring it to boil.
4. Filter the hot syrup into the batter and mix well.
5. Add cardamom powder and grated coconut.and the batter is ready.
6. Add 1tsp oil in the paniyaram pan. Fill 3/4th of the moulds with batter. Cover it with lid.
7. When the bottom of paniyaram is cooked invert them with a spoon.
8. When the paniyarams are cooked remove from mould and serve hot.

Parboiled rice-1/2cup
Jaggery-1 1/2cups(grated)
This is the combination. Increase or decrease jaggery as per your taste.

I simply love your blog and the delicious tried and tested recipes that you post. Sweet Paniyaram has always been my husband’s and my favorite. Would like to try out this recipe but it is not easy to find parboiled rice where I live. So is it possible to use raw rice only?
Hi anonymous! Thanks for the kind words. Soak 1/2cup of raw rice for 1 hour and steam cook it for 10minutes. This can be used as a substitute for parboiled rice. You can also use extra 2tbs urad dhal if you are not interested in the steaming method. Rice flakes also works best. Soak 1/4cup of rice flakes and grind it along with the raw rice. You will get fluffy paniyaram. Even after these substitutions, if you feel that paniyaram is little firm, you can add a pinch of baking soda to the batter. Try it and give me a feed back…
