Easy Mushroom Pulao Recipe

For the second week, I am posting under quick meals. Meal ideas to be prepared within 30 minutes are boon to housewives who try to pack lunch for kids early morning. I haven’t tried making any lunch box dishes within 30 minutes because I wake up so early in the morning. Usually I have two hours and so I even prepare an elaborate meal in that time. Just for fun, I chose this theme so that I get an idea of cooking within 30 minutes. It is possible to make a gravy, side dish and rice within 30 minutes only if you plan properly. Make sure that you have all the ingredients handy before starting. And select dishes which doesn’t include too much slicing because it surely takes lots of time.

Pulao is one dish which can be made in 30 minutes and requires no other side dish except a simple raitha. So when the pulao is cooking, you can slice onion for the raitha. Usually I prepare pulao in an open pan, but for time constraints, I made it in pressure cooker. This pulao has no grinding part and uses spice powders for a change. I used two pressure cookers to reduce time. One cooker was used to cook the mushrooms, while in the next cooker I added water and rice and kept it on heat until the mushrooms were cooked. Then I added the mushrooms to the rice for the final cooking. Alternately, you can heat water in another pan and add it to the cooker for the final cooking. My daughter loved it whereas my hubby found it slightly bland. Increase or decrease the spices according to your taste.

Ingredients:

Rice-2 cups

Oil-2 tbs

Clove-2

CInnamon-1 stick

Star Anise-2

Onion-1

Button Mushroom – 200 gm

Ginger Garlic-2 tbs

Sambar Powder- 2 tsp

Coriander Powder-1 tsp

Cumin Powder-1/2 tsp

Turmeric Powder-1/4 tsp

Water-5 cups

Salt to taste

 

Procedure:

In a separate pan, mix together water, rice and salt and bring to boil.

In a pressure cooker, heat oil and add the spices.

Add onion and sauté until translucent.

Add the mushrooms and the spice powders and salt just enough for mushrooms.

Do not add water. When the first whistle blows, reduce flame and cook for 2 minutes.

Release pressure, add the water rice mixture.

When the first whistle blows, reduce flame and pressure cook again for 3-4 minutes.

Let the pressure come down.

Serve The pulao hot along with raitha.

  3. Do you pressure cook twice ? Once without rice and second time after adding rice ? I love such one pot meals with a bowl of raita by the side.
