When coming to quick meal, I wanted to look beyond rice varieties. And this spaghetti dish is so easy to make and is completed within 30 minutes. I always watch Italian cookery shows in Fox Life channel. Some recipes they make are so simple but they are full of flavours. I tried one such dish for a day as an experiment and should say that it was a success. Both hubby and daughter liked it very much, but they added some ketchup to the spaghetti.
Though it may not be an authentic Italian dish, I tried to add Italian seasoning to imitate the dish. I love paneer and add it wherever I can. And this spaghetti also got some fried paneer to enhance the taste. You can add tofu or any other vegetables instead. Next time I am thinking of adding some kebabs. I know that nowadays, my imagination in Food photography has dried. I can see that my pictures are getting so dull day by day. I hope that I improve my photography within this year. Ingredients:
Spaghetti – 300 gm
Olive Oil-2 tbs
Onion-1
Garlic-2 pods minced
Green Chilly-3-4
Tomato -2 , ground to paste
Salt-to taste
Italian Seasoning Blend – 1 tsp
Coriander Leaves For Garnish
Paneer-200 gm
Procedure:
In a heavy bottomed pan, add water, salt and a tsp of olive oil.
When it comes to boil, add the spaghetti and let it cook for 10-15 minutes or follow the package instructions.
Once it is cooked, pour it over a sieve to drain water.
By the time spaghetti is cooking, let us move on to the sauce.
Heat oil in a non stick pan and roast the paneer cubes until golden. Remove them and transfer to a plate.
Add onions and garlic to the same oil.
Sauté until translucent.
Add tomato paste, salt and Italian seasoning.
Cook until the tomatoes are cooked.
Now add the paneer cubes, give a nice stir.
Add the cooked spaghetti and coriander leaves.
Mix well and serve immediately.
