How to Bake perfect Sandwich Breads
Baking a perfect loaf is dream come true for beginners. I wouldn’t say that I have mastered the art, but I have got some incredible results. And I am so happy when I see students and readers baking amazing breads with my recipes.
There are few points to be noted to bake good breads. Let me list them below:
Good quality yeast:
Using a good quality yeast is very important in getting good rise and texture. If the breads lacks texture, softness or lightness, the major issue might be with the yeast used. Always use fresh batch of yeast. Never stock it for more than three or four months. Also keep your pack in freezer to extend shelf life. I usually use a pack of yeast for 3 months and then go for a new pack just to be safe.
Choosing the Flour:
Flour used for the breads have a great impact on the results. I have used maida in most of the recipes, but the beetroot bread has bread flour in it. Bread flour is stronger than maida and can rise more and trap more air inside. Which will give you a lighter bread with a great texture. So in the same recipe, if you use 300 gm of maida, it would be better to use 260 gm of bread flour to get the same sized bread. I will share the link to the bread flour I use below the post. If using whole wheat flour, it is better to use vital wheat gluten to add some strength. Vital wheat gluten adds so much lightness in a 100% whole wheat bread. Try it once and you will know the difference.
Sugar:
When a recipe asks for sugar, you can use white sugar, brown sugar, jaggery, coconut sugar or cane sugar. But if you want to use honey, you need to replace the liquid ingredients with honey so that your dough doesn’t become too thin to handle.
Liquid:
Liquid is used in the recipe to bring the dough together. Too less of liquid, you will end up with dry dough and too much of liquid will make the dough too thin and very tough to handle. Every flour has different absorption capabilities. Even different brands of maida will differ in absorbing liquid. So when you add liquid, always start from less quantity and then add only if necessary. Say a recipe calls for 200 ml liquid, you start with 150 ml and then add more if needed.
You can use any liquid to knead the dough. Water, fruit juices, blended vegetable puree, milk, plant based milk are some of the options.
Type of kneading:
There are various ways you can knead bread dough. The simplest is by hand. The easiest is by using stand mixer. You can also use the atta kneading attachment of your wet grinder to knead dough. You can also use the kneading blade of your hand mixer. The only problem is the heating up of the hand mixer. So you need to give rest in between. DO not use your food processor to knead as it is too fast and there are chances of killing your yeast.
Window Pane Test:
A window pane test is an absolute necessity when it comes to sandwich breads. The more you knead, the dough develops gluten and becomes stronger. A stronger dough can hold air inside which will result in an airy texture and light bread. So do not skip it. I have made a video on how to do window pane test. This is one of the easiest sandwich loaf you can make. And the result loaf is so soft and beautiful.

Whole Wheat Pumpkin Sandwich Loaf
Adding vegetable puree to bread dough always gives you amazing softness. Here is a whole wheat bread made with pumpkin puree. Look at the wonderful colour and texture. You can use this as a snacks bread slathered with a savoury spread of your choice.

Usually bread dough is proved twice, but in this English Muffin loaf, there is no double proving involved. You mix the dough, knead the dough and directly prove it in the bread tin and bake. This reduces your preparation time by half and still you get a wonderfully airy loaf.

Have you ever tried to bake bread with rava/ semolina. If you haven’t done it, it is time to try. Semolina gives a beautiful soft bread so much like the maida bread. There will be differences, but still they are wonderful. I even did a 100% semolina bread class last year. This also involves a technique called yudane which adds to the softness of the crumb.

Sourdough Sandwich Loaf
Usually sourdough is used in artisan breads, but have you ever tired to bake a sandwich loaf? If no, then it is time to try it. This is a basic recipe. Very easy to make if you have an active sourdough starter.

Beetroot Sandwich Loaf
Adding beetroot puree in the dough gives it a beautiful pink shade and also adds to the softness of the crumb. I also used a different technique to make the dough. Don’t be intimidated, it is quite easy. And the end results are mind blowing.
